Pumpkin season is here, and pumpkin recipes are everywhere. But instead of using pumpkin in these peanut butter pumpkins, they just look pumpkins. These delicious candies are peanut butter balls colored orange and shaped like a pumpkin. A chocolate chip is placed on top of each pumpkin to resemble the pumpkin stem. As cute as these peanut butter pumpkins are, they are just as delicious. These peanut butter pumpkins would be a great Halloween treat to make with you kids, or to decorate cupcakes.

To make the base for the peanut butter pumpkins, peanut butter and softened butter are beat together with a hand mixer until they are smooth. Powered sugar is beat into the mixture, one cup at a time until the sugar is fully incorporated. Beat orange food coloring into the peanut butter mixture. If you do not have orange food coloring, beat yellow and red food coloring into the mixture until it is fully orange. Shape the peanut butter dough into small tablespoon size balls. Using a toothpick, gently press around the sides of the balls, giving the ball a pumpkin shape. Place one chocolate chip on top of each peanut butter ball. Refrigerate until you are ready to serve.

Ingredients
  

  • 1 cup peanut butter
  • 1/2 cup butter, softened
  • 3 cups powdered sugar
  • Orange food coloring
  • Chocolate chips

Instructions
 

  • In a large bowl using a mixer, beat peanut butter with softened butter until smooth. Gradually add in powered sugar until fully combined.
  • Add in orange food coloring, beat until the mixture is fully orange. Roll mixture into small balls and using a toothpick, make indentions around the sides. Place a chocolate chip on top of each peanut butter ball. Refrigerate until serving.
