Ingredients

  

Fire-Roasted

  • 4 Fresno peppers
  • 3 cups cherry tomatoes
  • ½ onion roughly chopped
  • 3 cloves garlic unpeeled
  • 1 lime juiced
  • bunch cilantro

Salsa Verde

  • 5 tomatillos unhusked
  • 1 green bell pepper
  • 1 jalapeno pepper
  • 2 serrano peppers
  • 1 poblano pepper
  • ½ onion roughly chopped
  • 3 cloves garlic unpeeled
  • 1 lime juiced
  • bunch cilantro

Pico de Gallo

  • 4 Roma tomatoes deseeded and diced
  • onion diced
  • bunch cilantro chopped
  • 1 lime juiced

Instructions

 

  • Lay out the ingredients for the fire-roasted and salsa verde (except for lime and cilantron a large baking sheet. Broil, turning every minute or two, until moderately charred. Peel garlic. Place ingredients for fire roasted salsa (including cilantro and limin blender (or use immersion blendeand blend until smooth. Repeat for salsa verde. For pico de gallo, just combine all uncooked ingredients in a bowl. Season each salsa with salt/pepper, to taste.
