October is pumpkin season, which means that I have been making everything pumpkin flavored. Pancakes are no exception, pumpkin puree and pumpkin pie spice are delicious in fluffy pancakes. These pancakes are fluffy and so flavorful, filled with pumpkin, brown sugar and pumpkin pie spice. With a cinnamon pumpkin flavor, these pancakes taste like fall. Make these pancakes for a fun start to a cool fall morning.

Only one bowl and a whisk is all that you need to prepare this pancake batter. The pancake batter is made by whisking all of the dry ingredients into a large bowl. Add melted butter, canned pumpkin puree, eggs and milk into the dry ingredients. Whisk all of the ingredients together until just combined. Heat a skillet or a griddle over medium-low heat and grease with non-stick cooking spray. Ladle about 1/4 cup of the pancake batter onto the hot skillet and let it cook until bubbles start to form. Flip the pancakes and let it cook for another minute, until both sides are lightly browned.

Pumpkin Pancakes

Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 4 tablespoons brown sugar
  • 4 teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup butter, melted
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 1/2 cups milk

Instructions
 

  • In a large bowl, whisk together flour, sugar, baking powder, salt and pumpkin pie spice. Add in melted butter, pumpkin puree, eggs and milk. Whisk until just combined.
  • Heat a skillet or griddle over medium-low heat and lightly grease with non stick cooking spray.
  • Ladle about 1/4 cup of the pancake batter onto the hot skillet and cook until bubbles start to form. Flip and cook other side until lightly browned.
