  • Cream cheese – you can use fromage blanc or Philadelphia cream cheese
  • Onion – use regular onion or sweet white onion
  • Bacon – works best with bacon cut into small bits
  • Salt and pepper – season to taste

  1. The first step in this recipe is to make your very own pizza dough. You can use store-bought pizza dough but I would recommend making your own.
  2. Then heat your oven as high as it can go. If that is 500℉/250℃ that is perfect, if it can go higher, heat it. While you let the dough rise you can finely slice your onion. I use a mandoline slicer to get ultra-thin sliced onion rings.
  3. When the dough has been proofed sprinkle some flour on a board and roll the dough into a round shape. Take the Fromage blanc or white cheese and spread it on the dough base and leave about a 1-inch border at the edge.
  4. Divide the thinly sliced onion on top of the dough. Sprinkle bacon on the flammkuchen. Put your oven to broil for 5 minutes to let it warm.
  5. Put the tarte flambée in the oven for about 5 to 6 minutes and you are ready to serve.

So, what is a flammekueche? Is it German or French as it is also called tarte flambée? It is a bit of both. The first flammekueche was made by German farmers living near the German-French border who would bake bread just once a week in a wood-burning oven.

To check the temperature the farmers would put a flammekueche in the oven. If the kueche would be done in less than 2 minutes the oven was hot enough to bake bread.

Ingredients

  • Dough:
  • 1¼ cups all-purpose flour
  • ½ cup warm water
  • ½ teaspoon instant yeast
  • ½ teaspoon sugar
  • ½ teaspoon salt
  • Topping:
  • 1 cup Fromage blanc or Philadelphia cheese
  • Flour, for dusting
  • 1 medium onion, very thinly sliced
  • 200-grams bacon, sliced in thin strips
  • Kosher salt and freshly ground black pepper

Instructions

  1. Make your very own pizza dough #15462 and let it rise. Then heat your oven as high as it can go at 500℉/250℃ or higher if possible
  2. Finely slice your onion with a mandoline slicer to get ultra-thin sliced onion rings 
  3. Roll the dough into a round shape. Spread the Fromage blanc or white cheese and on the dough base and leave about 1-inch border from the edge
  4. Divide the sliced onion on the dough. Sprinkle the bacon on a the flammkuchen
  5. Put your oven to broil for 5 minutes to let it warm
  6. Put the tarte flambée in the oven for about 5 to 6 minutes
  7. Ready to serve
