Now that I’ve successfully entered into the working field, I find myself exhausted when I get home. I rarely have the time to whip up something fancy, so I like to cook quick and easy meals. Just like this Vegetarian Caribbean Style Curry Breadfruit recipe that I will share with you guys.

If you live in the Caribbean then you definitely are familiar to this ingredient. I grew up eating breadfruit, it was something that you would have for breakfast, lunch, dinner or as a snack. Breadfruit is a vegetable that is grown throwout the Caribbean and that is used as side or main dish.

I chose to use this famous vegetable as a side dish and in a way many people would enjoy it. I love good curry dish, whether it may a be a classic curry chicken or even curry goat(which is my absolute favorite). Since I know I am not the only one who likes curry and probably breadfruit, I figured combining the both of them would be a genius idea.

This recipe is extremely easy, simple and quick to make. You can enjoy this with a serving of white rice and call it a meal. To ensure you get the best results, I thought I should share some TIPS & TRICKS with you guys.

TIPS & TRICKS
  • Cooking the breadfruit: Obviously, I had to share some tips on cooking the breadfruit. It may seem like a lot of work but trust me it isn’t. If you are using a fresh breadfruit then you will need to cut and peel it. If using fresh breadfruit: Simply cut the breadfruit into chunks, start by cutting it in half then into chunks. In order to remove the skin, I highly recommend doing so after it has been boiled. If using frozen breadfruit: all you need to do is boil it. Usually they are already sliced, you will need to thaw the slices and cut them into chunks then boil. Frozen breadfruit can be found in the international aisle of your grocery store.
  • Making the curry: This is simple, I used my famous Jamaican curry that I bought in the grocery store, I added water, tomato paste, seasoning, salt and black pepper. I let the sauce simmer a little before adding my boiled breadfruit to the sauce.

Vegetarian Caribbean Style Curry Breadfruit

Ingredients

  • 1 lb Breadfruit(fresh or frozen) cut into chunks
  • 2 branches Thyme
  • 2-3 minced Garlic cloves
  • 1 medium Onion
  • 1 medium Bell pepper
  • 1/2 cup Water (you may need more or less)
  • 1/4 cup Vegetable or olive oil
  • 3 tbsp Curry powder
  • 2 tbsp Tomato paste
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions

Boiling the breadfruit:

  • Add the chunks of breadfruit into a pot of boiling water that has been salted.
  • Boil until the breadfruit are cooked and you can pierce them with a fork, which takes 10-12 minutes. Do not boil them too long.
  • After they are cooked, drain them and set aside.

Making the curry:

  • In a large sauce pan or skillet over medium heat, heat the oil then add the onions, bell peppers and garlic. Cook for 2-3 minutes.
  • Stir in the curry, salt, black pepper, tomato paste followed by the water.Stir everything together then cover and simmer, let it simmer for 5-7 minutes.
  • Stir in the breadfruit chunks and let it cook for 7-10 minutes.@
  • Serve and enjoy!
