What You Need For This Recipe

For this Spanish tapas recipe, you need quite several ingredients. Make your grocery shopping list and put the following ingredients on it:

  • Cod filets – cod has great texture and flavor that fits perfectly in this fritter recipe
  • Potatoes – use potatoes with a lot of starch like russet or Yukon gold potato
  • Flour – add self-raising flour to this recipe
  • Garlic – fresh garlic finely minced
  • Scallion – thinly slices
  • Egg – a big egg
  • Fresh parsley – finely chop
  • Olive oil – you need a good quality oil
  • Salt and pepper – to season

How To Make Cod Fritters

  1. To make cod fritters or buñuelos de bacalao start by bringing a pan of water with water to a boil. Add the cod and let it boil for 20 minutes. In the meantime, peel the potatoes and wash them in cold water.
  2. Put the potatoes in a pot and boil for 12-15 minutes. Drain the potatoes and add 1 cup of milk so you can turn them into a mash. You can turn down the heat to low while you puree the potatoes.
  3. Take a bowl and put the fish in the bowl so you can take the fish apart. Finely chop the scallion, garlic, and parsley.
  4. Add all these ingredients to the mashed potatoes and add the self-raising flour, pepper, and a beaten egg. Mix all the ingredients with a fork until everything is well mixed.
  5. Cover the bowl with plastic wrap and let it cool in the fridge for about 1 hour (longer if you have time) so that the flavors can mix well.
  6. In the meantime, cover a baking sheet with baking paper. Now make balls the size of a golf ball and press them slightly flat with a spoon.
  7. Then place the fritters on the baking sheet and finish them by brushing with a little bit of oil or cooking spray. Preheat the oven to 375℉/190℃ and bake the Spanish salt cod fritters for 17-20 minutes or until light brown.
  8. Serve immediately with some roasted tomato salsa.

Spanish-style fritters are called buñuelos de bacalao and were originally made with dried salted cod. You can find a lot of dried fish recipes in warm countries.

The main reason is to preserve the fish this way when no fridge is around. If you want to use dried cod in this recipe you have to soak the fish in large quantities of water first.

To release the salt from the fish, the water has to be refreshed regularly. But as you can imagine this is a tedious and slow process.

Can You Make Spanish Cod Fritters Ahead?

Yes, you can! If you have a party, you can make this tapas recipe ahead of time. Just make the potato fish mixture one day in advance and store it in the fridge in an airtight food container.

It is also possible to shape the fritter balls and store them in the fridge or freezer. All you have to do now is bake them on the day of the party and you will have freshly baked fish tapas.

How To Store Cod Fritters

If you have leftovers let them cool completely before you store them. When you make buñuelos de bacalao fritters you have several ways to store them:

  • Fridge – if you plan on using these within a day you can store them in the fridge in an airtight container and reheat them right before serving
  • Freezer – if you want to store them for more than 2 days put them in the freezer. Again, take an airtight container. You can store them for at least 2 to 3 months

How To Reheat Spanish Fritters

When you want to reheat the fritters, you also have several options. If you froze them let them thaw first in the refrigerator.

  • Oven – preheat your oven to 375℉/190℃ put the cod fritters on a parchment-lined baking sheet and put them in the middle of the oven. Reheat for 5 to 6 minutes or until warmed through
  • Air Fryer – preheat the Air Fryer to 350℉/175℃ for 3 minutes. Put the Spanish cod fritters in the Air Fryer basket or put them on the grill pan. Reheat for 4 minutes or until warmed through
  • Toaster oven – preheat the toaster oven to 375℉/190℃ for 5 minutes. Put the fritters on a toaster oven rack and put them in the middle of the toaster oven. Heat for 5-6 minutes

Ingredients

  • 300-gram cod
  • 300-gram mashed potatoes
  • 1 scallion
  • 2 garlic cloves
  • 50-gram self-raising flour
  • 1 egg
  • 4 tablespoons parsley finely chopped
  • 1 tablespoon olive oil or cooking spray
  • Salt and pepper to taste

Instructions

  1. Boil water and add the cod. Let it boil for 20 minutes
  2. Peel the potatoes and wash with cold water. Boil for 12-15 minutes

  9. Preheat the oven to 375℉/190℃ and bake the Spanish salt cod fritters for 15-20 minutes or until light brown
  10. Serve immediately
