Crispy Oven Baked Low Carb Onion Rings

No need for a fryer to get your crunch on with this epic keto side dish – Crispy Low Carb Onion Rings!

Yes you read that right, these Oven Baked Low Carb Onion Rings are CRISPY!

If you are as big of an onion ring fan as I am, I bet you’ve made traditional onion rings a time or two. Personally, I have never owned a deep fryer, and the thought of heating a big ol’ pot of oil on the stove makes me TERRIFIED, especially with littles running around.

So in order to make onion rings I would bake them in the oven. They were alright, though never came out truly crispy. It was always a disappointment, though that never stopped me from making them again and again.

If only I had tried these beauties – low carb style – all those years ago… Guys, these Crispy Oven Baked Low Carb Onion Rings are the bomb-digity! You’ll be amazed at how crispy they are and easy to make! I hope you love these crunchy, snacky goodies as much as we do!

Ingredients

You won’t need a lot to make these delicious Low Carb Onion Rings at home.

  • large onion
  • pork rinds
  • almond flour
  • chili powder
  • garlic powder
  • sea salt
  • ground black pepper
  • an egg
  • heavy whipping cream

I am alllll about the dip. My favourites for these Low Carb Onion Rings would either be No Sugar Added Ketchup, Garlic Aioli or Chipotle Mayo!

How to make Crispy Oven Baked Low Carb Onion Rings

Start by heating the oven to 450° and line a baking sheet with a non stick baking mat or parchment paper. Set aside.

Crush the pork rinds into a fine crumble. I find using a rolling pin perfect to wack the pork rinds and crush them easily and efficiently. Add them to a mixing bowl and go through to make sure there are no large chunks left behind. Set aside for now.

Place almond flour in a medium sized mixing bowl and add chili powder, garlic powder, sea salt, black pepper and mix until fully combined. Slice the ends off of the onion, then remove the peel. Slice the onion into large rings, about 1/2″ thick, then separate the rings. Keep all the large rings, saving the smaller ones for another recipe; you should get about 12-16 large, sturdy rings.

Toss each onion ring in the almond flour, then place evenly on a baking sheet. If you get more than 12 rings, you’ll have to divide the slices between two baking sheets.

Once all of the rings have been tossed into the almond flour, mix the egg and heavy whipping cream into the almond flour and mix well to create a batter.

Use tongs or a fork to dip an onion ring into the batter, until the whole ring is submerged.

Take the ring out and allow the batter to drip from the ring, then toss it into the pork rinds until fully coated; place evenly on the baking sheet. Use a separate utensil for each the batter and the pork rinds. If too much batter gets into the pork rinds, they will clump up and be difficult to coat onto the onion rings.

Once all of the onion rings have been coated in batter and pork rinds, place them evenly onto the baking sheet(s).

Bake them for 10-12 minutes, until golden and crisp. Serve with Garlic Aioli, No Sugar Added Ketchup or Chipotle Mayo.

Expert Tips

  1. Make sure the pork rinds have been crushed finelythis will help with the coating process.
  2. Only use large, sturdy onion rings. If they are flimsy slices, they will be difficult to work with and will not hold up well once baked.
  3. To get the most out of your pork rinds, try to shake off as much of the batter as possible before tossing the battered onion rings in the pork rinds.
  4. Have leftover batter and pork rinds? Double dip those beauties! The more batter and pork rinds, the crispier these onion rings will be!

      Hey Cookie! You can absolutely use almond flour instead of the pork rinds. They won’t turn out quite as crispy but they should still have a decent crunch! I don’t see why these wouldn’t work in an air fryer – you’ll have to let me know how they turn out!
