Garlic Roasted Red Potatoes

Red potatoes are smaller than the usual russet potatoes that I use, and the red potatoes skin is smoother. While I like to use russet potatoes when I am making mashed potatoes or french fries. But red potatoes are best for pan fried potatoes or like these oven roasted red potatoes. They are crispy with tons of garlic flavor, making them a delicious way to eat potatoes. These potatoes are both vegan and gluten-free, so they go well with any diet. With very little prep work involved, these potatoes are the perfect simple side dish to go with any main dish.

There is no need to peel the potatoes, they are baked with the skin on. Cut the potatoes into 1-inch cubes and place them into a large plastic bag. Drizzle with olive oil, minced garlic, salt, pepper and garlic powder. Shake the bag to fully coat the potatoes. Spread out the mixture into a large baking dish in a single layer. Roast in the oven for 40-45 minutes until the potatoes are browned and crispy.

Garlic Roasted Red Potatoes

Ingredients
  

  • 2 pounds red potatoes, cubed into 1-inch pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder

Instructions
 

  • Preheat oven to 400 F. Dice potatoes into 1-inch cubes. Place into a large plastic bag and add in the olive oil, minced garlic, salt, pepper and garlic powder. Shake bag to evenly coat potatoes.
  • Spread potatoes out into a single layer in a large baking dish. Bake for 40-45 minutes.
