Quick Tomato & Cucumber Salad

Today’s recipe, Quick Tomato Cucumber Salad, is perfect for days when you are feeling lazy. 🙂 We all have those days! This is a very simple salad, and together with Spinach & Figs Refreshing Salad makes one of the quickest on our website and fits under five minutes category.

We used very simple ingredients to make this salad convenient for everyone. If capers are not your thing, olives can be a great replacement. The same comes for spices. Our pick choices were basil and oregano, we haven’t added any salt or pepper. Feel free to make the salad the way that will meet your needs! 🙂
Tomato Cucumber Salad
One of the things we love the most about this salad, especially now in the summer season, is the refreshing Mediterranean taste. It reminds us of delicious Greek and Italian cuisine like it’s some kind of mix of those two. Weight Loss Salad

INGREDIENTS

  • 1 medium-size tomato
  • 1/2 cucumber
  • 2 tablespoons capers
  • 4-5 fresh basil leaves
  • 1/2 small onion
  • a sprinkle of dried oregano

DRESSING

  • 1 tablespoon apple cider vinegar
  • 1 tablespoon extra virgin olive oil
  • water (optional)

INSTRUCTIONS

  • Slice tomato and cucumber into thin round slices. Cut the onions crosswise as you are making onion rings. 
  • Roughly chop the basil leaves. 
  • In a large shallow dish add layer of sliced tomatoes, then layer of sliced cucumber, and finally a layer of onions. Add the rest of the ingredients (chopped basil, caper, and oregano) on top of the salad.
  • In a small bowl add apple cider vinegar and olive oil, mix well. Add water if the flavor is too strong for you. Drizzle the dressing on top of the salad. We usually leave it like this, but if you want you can toss everything. Salad can be enjoyed right away, but the best taste it has if it sits for about 30 minutes in the fridge.
