When its brownies, I cannot make them with regular cocoa powder. For me a brownie is all about pure chocolate and not even compound chocolate. You may come across a lot of recipes that do not use melted chocolate but just cocoa powder. Well !! They work well but not for me. To keep up to the beautiful texture and bring to you the best taste, we work only with pure/ real dark chocolate

LET’S TALK INGREDIENTS FOR THE BEST BROOKIE RECIPE

COMPOUND CHOCOLATE/ PURE CHOCOLATE OR COCOA POWDER ??

You may come across many recipes that follow one of these ingredients or maybe a combination of these. To keep up with the rich decadent tastes I make sure to use only PURE DARK CHOCOLATE also known as real chocolate. 

Cocoa powder is good but you cannot compare it with cookies made with pure melted chocolate. You may use dark compound chocolate only if pure dark chocolate is not available. However, you need to bid goodbye to the cocoa powder for this recipe as I don’t recommend using cocoa powder for this one

EGGS 

This cookie recipe contains eggs. In case you are a vegetarian and are looking for a substitute, flax egg is what you could use. 
To do so combine, 2 tablespoons powdered flax seeds or flax seeds meal with 5 tablespoons of water. Let this sit for 5-6 mins or until a bit thick or gelatin-like consistency

You can now add this to the batter instead of the eggs and you good to go with making the big brownie cookies

CHILL THE BATTER BEFORE BAKING 

This step is very essential. Once the batter is ready, cling wrap the bowl and let it sit in the fridge for an hour. This will firm up the batter and make it easier to scoop out cookies for baking

At this stage you can make smooth balls of the cookie batter using your palms, however, I like these cookies in their rustic look. All I do is use a big ice scooper and the batter onto a baking dish lined with parchment paper or a silicone sheet 

BAKING 

These cookies are big so baking takes a little longer than normal cookies. It takes about 20-30 mins to bake.

How do you know they’re baked ?? The cookie should form a crust/skin on top and should also feel firm on the edges. Do not overbake the cookies. If the cookies feel a bit soft in the center while baking, its good but the edges should feel done

Recipe – The Best Fudgy Chocolate Brownie Cookies

Ingredients 
  • 1/2 cup (60 grams) all-purpose flour 
  • 1/2 teaspoon (2.5 grams) baking powder
  • 3/4 cup (140 grams) brown sugar 
  • 2 eggs 
  • 1/2 teaspoon (2.5 ml/grams) vanilla extract
  • 1  1/8 cup (210 grams) pure dark chocolate chunks 
  • 2 tablespoons (30 grams) salted butter 
  • 1/2 cup (95 grams) chunks of pure dark chocolate (roughly chopped)
Instructions 
  • In a bowl, combine the all-purpose flour and baking powder together. Set aside
  • On a double boiler, melt 200 grams of the dark chocolate along with the salted butter. Remove from the heat once melted
  • In a big bowl, beat the brown sugar with the eggs on high speed until this mixture turns thick and fluffy, it should double in size. This takes about 2-3 mins. Add the vanilla essence, melted chocolate mixture and continue beating. 
  • Add the flour mixture and roughly chopped pure dark chocolate chunks. Mix well making sure there are no lumps. 
  • Cling wrap the bowl and let it sit in the refrigerator for an hour. Once done, scoop out huge amounts of the batter using a big ice cream scooper and place the cookie batter at a distance from each other on a cookie tray. Slightly press the top of each cookie (do not press too much, but just to smoothen the top a bit) 
  • Bake these cookies in a preheated oven at 170 degrees C for 20-30 mins or until the sides of the cookie feel firm and top of the cookie has a crust formed. Cool completely once done. Enjoy !! 
Note
  • Once weighed, grind the brown sugar if it’s too thick. If the brown sugar is super fine there is no need to grind. In India, we normally get thick brown sugar granules easily more than superfine, due to which I weigh the sugar and then grind it

  1. I tried this recipe with flax egg I don’t know what went wrong my cookies didn’t take any shape they just spread out like spread out crazily and are sooo thin like papad. Can you please suggest some tips.

    1. Did u use couverture chocolate? I suggest u use compound chocolate. Or the other issue is the oven heating. Maybe the heating was too high and thus the cookies spread out. Reduce the temperature. Also, cling wrapping and chilling the cookie dough before baking is very very important. Let me know if this helps !!
