Slow Cooker Paella

Paella is a traditional Spanish dish that combines meat, seafood, and rice. This is an easy-to-make shortcut recipe using a slow cooker.

Ingredients

  

  • 2 chicken breasts cut into 1-inch cubes
  • 11 oz chorizo unsheathed
  • 1 cup rice
  • 1 15 oz can diced tomatoes
  • 1 large onion diced
  • 4 cloves garlic minced
  • 2 tsp paprika
  • 2 bay leaves
  • ¼ tsp saffron threads
  • 1 tsp cayenne pepper
  • 2 cups chicken broth
  • cup white wine
  • ½ lb shrimp peeled and deveined
  • 1 cup frozen peas
  • Cilantro for garnish
  • 1 lemon juiced
  • 1 avocado sliced
  • pita bread

Instructions

 

  • In a large pan, saute the chicken cubes with olive until cooked through and place in the slow cooker. Do the same with the chorizo. Add the remaining ingredients (except for the cilantro, lemon, avocado, and pita breaand mix thoroughly.
  • Set slow cooker to high and cook for ~2hrs or until the rice is completely cooked through. Serve warm with lemon wedges, avocado, and pita bread on the side.
