Easy Cajun Chicken and Dumplings Recipe

In my part of the country when you think of comfort food it doesn't get much better than chicken and dumplings.  The best part is this comfort dish doesn't have to take all day. Take my Easy Cajun Chicken and Dumplings Recipe for example.  


A delicious, down home meal that is made in one pot and on the table in 30 minutes this Easy Cajun Chicken and Dumplings Recipe is the perfect quick and easy weeknight meal!  I can't wait to share it with you so...

Let's get started!

OH!  And to keep things even more simple I will include the crockpot and Instant Pot instructions at the end.

For this Easy Cajun Chicken and Dumplings recipe you will need these simple ingredients:


  • 2-3 Boneless, Skinless Chicken Breasts
  • 4 cups Chicken Broth
  • 2 cups Water
  • 3 stalks of Celery, finely diced
  • 1 Green Bell Pepper, finely diced
  • 1 Red Onion, finely diced
  • 1 Tbsp Garlic, minced
  • 1 Tbsp Cajun/Creole Seasoning
  • 3 Bay Leaves
  • 1 10.5 oz Can of Cream of Mushroom Soup
  • 1 8 ct Can of Biscuits


To begin you will need to place a large soup pot or dutch oven over Medium/High heat.
Add a little oil and allow the pot to get hot.

(I made a rhyme there.  Did ya catch it?  lol)


Once the pot is hot (he he) add the celery, green pepper, and onion.  This is called the holy trinity, and is the base of any and all good cajun dishes.

Sauté for 2-3 minutes until the vegetables are tender and the onions are translucent.


Next add the garlic and sauté for another minute.


Place the chicken into the soup pot.


Pour in the chicken broth and the water.


Add the cajun/creole seasoning and...


the bay leaves.

You will notice that I haven't added any salt or pepper to this recipe.  That's because there are a lot of salty elements.  You can always taste at the end and add more if you like.  Also, all of the spice I need is coming from the cajun/creole seasoning.


Bring to a boil and cook for 10 minutes to allow the chicken to fully cook.


While the chicken is cooking in the pot, take this time to cut the canned biscuits into dumplings.  To do this simply cut each biscuit into four pieces and roll each piece into a ball.  Voila!  It's that simple!


Once the chicken is fully cooked remove it and the bay leaves from the pot.



Add the can of cream of chicken soup to the pot and stir it into the broth.


Shred the chicken and...


return it to the pot.


Now place the dumpling balls into the pot.

Do not stir or mess with the dumplings.  Just bring the broth to a boil and let them cook for...


Twenty minutes.


After the 20 minutes are up the dumplings will be fully cooked and the gravy will be slightly thick and creamy.


Top with a little fresh green onions and a light dusting of smoked paprika (trust me on this, it makes the flavor really pop) serve and enjoy.

Crockpot Instructions:

  • Place everything except the biscuits in the crockpot and cook on LOW for 6-8 hours or HIGH for 4-6 hours.  
  • With 1 hour remaining, remove the chicken and bay leaves from the slow cooker, shred the chicken and return it to the crockpot.  
  • Give everything a good stir to make sure the soup is incorporated into the broth. 
  • Cut the biscuits into the dumplings and place into the crockpot.  Cover and let cook the remaining hour.  
  • Serve and Enjoy!
Instant Pot Instructions:
  • Place everything but the biscuits into the Instant pot.  
  • Place the lid onto the Instant Pot and make sure the valve is set to sealing.  
  • Turn the Instant on MANUAL for 10 minutes.  
  • Do a quick release. 
  • Remove the chicken and bay leaves from the Instant Pot.  Shred the Chicken and return to the pressure cooker 
  • Give everything a stir and add the dumplings to the Instant Pot.  
  • Place the Lid onto the pressure cooker and make sure the valve is set to SEALING.  
  • Cook on MANUAL for 2 minutes and allow for a 3 minute NATURAL RELEASE.  
  • After 3 minutes do a quick release.
  • Serve and Enjoy!

ingredients:

How to cook Easy Cajun Chicken and Dumplings Recipe

Stove Top Instructions:
  1. Place a soup pot or dutch oven over medium/high heat, add a little oil, and allow the pot to get hot.

  8. Add the can of cream of chicken soup to the pot and stir into the broth. 
  9.  Shred the chicken and return it to the pot.
  10. Place the dumplings into the pot, bring to a boil, and cook for 20 minutes. 
  11. Serve and Enjoy!
  12. **Top with some sliced green onion and smoked paprika for even better flavor**
Crockpot Instructions:
