Barbacoa, the Spanish word for barbecue originated in the Caribbean. Now associated with Mexican cuisine, barbacoa is slow-cooking meat with a blend of spices, chipotle peppers, onions, garlic and lime juice. The meat is so tender you can shred it with a fork. This Instant Pot Barbacoa Beef is made totally from scratch and tastes just like the authentic Mexican barbacoa beef. The best part, this gluten-free recipe is super simple to make, add everything to the instant pot and let it cook to perfection at a fraction of time that you would traditionally cook this Mexican dish.

There are many ways you can serve barbacoa beef. My favourite way to serve this dish is over lettuce leaves with fresh tomatoes. If you are looking for something, heartier serve this tasty beef over rice with black beans and salsa, in gluten-free hamburger buns with veggies, or with a soft gluten-free tortilla. During summer months I like to keep the meals light, so I add the tender, flavourful barbacoa beef to my favourite avocado and black beans kale salad.
