Ingredients

  

Marinade

  • 2.5 lbs chicken breast sliced into strips lengthwise
  • 1 can coconut milk
  • 1 tbsp curry
  • 1 tbsp cumin
  • 1/2 tbsp turmeric
  • 1 tbsp garam masala
  • 1 tsp salt
  • bamboo or metal skewers

Peanut Sauce

  • cup peanut butter
  • 2 tbsp soy sauce
  • ¼ cup water
  • 1 tsp garlic powder
  • 1 lime juiced
  • ½ tsp red pepper flakes
  • 3 tbsp peanuts crushed

Instructions

 

Chicken

  • Combine all marinade ingredients. Thread chicken onto skewers and place in a baking dish. Pour over marinade and coat evenly. Let marinate in the fridge for at least an hour.
  • After marinating, oil grill grates, preheat grill on medium-high heat, and then grill the skewers for about 10-15 minutes or until no longer pink inside.

Sauce

  • Meanwhile, make peanut dipping sauce by combining all ingredients except peanuts in a small bowl and mixing thoroughly (you can add more peanut butter or water to get desired consistency).
  • Bring a small pan to medium heat on the stove (without oil) and add peanuts. Toast for about 2 minutes or until slightly browned. Top the sauce with these peanuts.
