What You Need For This Recipe
To make this great chicken recipe you need a limited number of ingredients. Take a look at all the ingredients below and put them on your grocery list:
- Chicken thighs – as chicken thighs have more fat it works well in this recipe. You can use chicken breasts but they can get dry
- Marinade – we use a red chimichurri sauce made with bell peppers, onions, and lots of spices
- Lemon – adds freshness to your chicken
- Olive oil – to cook the chicken you need olive oil
- Salt – season to taste

How To Make Chimichurri Chicken
- To make this recipe start with cleaning the chicken thighs. Remove any excess fat and put the thighs in a big bowl. Squeeze lemon juice on top of the chicken thighs.
- Then spoon 4 tablespoons of the red chimichurri sauce on the chicken thighs and stir to cover all of the chicken with the marinade. Preserve the remaining chimichurri.
- Heat a skillet on medium to high heat and add the olive oil. Bake the chicken thighs golden brown, this will take about 6-7 minutes per side.
- Resist the urge to move the chicken when you add them to the skillet. It will first stick before it releases so be patient and after a couple of minutes, it will come loose.
- When both sides are baked turn the heat to a simmer. Cook until the chicken thighs are golden brown add water to let all of the chicken bits release from the skillet.
- Let the water warm through. Serve with some more chimichurri on top of the thighs just like you would do with steak chimichurri.

As we made red chimichurri this week it was only logical to use it in this recipe but it will taste just great with this salsa verde green chimichurri.
No reason to waste a great sauce, that can easily sub for a marinade as well.
How To Store Chicken Chimichurri
If you want to store chicken you have to let it cool completely. There are several ways to store your chicken. :
- Refrigerator – you can store it in the fridge if you plan on serving it within a day or two. Put it in a food container preferably airtight
- Freezer – want to keep it longer, then you can store it in the freezer. Put it in a food container or a resealable bag. Label it and store it for up to 2 months
How To Reheat Red Chimichurri Chicken
If you have some leftover chicken, you can reheat it in several ways:
- Cast-iron skillet – very easy to warm your chicken in this cast-iron skillet. Heat it to medium hot then add a little bit of oil before adding the chicken. Add ¼ cup of water and let it warm so you also get some gravy
- Dutch Oven – put it in a Dutch Oven. Add ¼ cup water or stock and let the chicken warm through
- Air Fryer – preheat your Air Fryer for 3 minutes to 375℉/190℃. Put the chicken in a baking pan and if the chicken is very well browned cover it with aluminum foil. Cook for 5 minutes or until warm
- Oven – this is similar to the Air Fryer however as an oven is larger compared to an oven it usually takes longer to heat. Put the chicken on a baking sheet lined with parchment paper. If needed cover with aluminum foil. Heat to 390℉/198℃ and cook for 5 to 7 minutes or until warmed through

Chimichurri Chicken
Turn regular chicken thighs into amazing chicken using this chimichurri chicken recipe. Make it with red chimichurri or green chimichurri.
Ingredients
- 6 chicken thighs
- 1 cup of red chimichurri
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Pinch of salt
Instructions
- Clean the chicken thighs removing excess fat. Squeeze lemon on top of the chicken thighs
- Spoon 4 tablespoons on the chicken thighs, stir to cover the thighs with marinade
