Keto Antipasto Salad

Light up your taste buds with this fast and easy Keto Antipasto Salad, ready in just 10 minutes. Fully loaded with all sorts of goodies, this salad will keep you full and fuelled. Prep it the night before for a tasty lunch salad for work/busy days!

All thanks to Nick, this Italian Chopped Salad was born. We both love salad for lunch/dinner any day of the week, though I would say he loves them just a little bit more. I’m more than happy to enjoy a basic Green Salad, or Kale Caesar on repeat, but he likes to switch it up.

So, I created a Keto Antipasto Salad, including all of his favourite ingredients, and paired it with my favourite Keto Italian Dressing. It was an instant hit, and still to this day, he gets excited when I whip it up for him!

Ingredients

All ingredients used in this Keto Antipasto Salad.

Dressing – I like to use this Keto Italian Dressing but a greek dressing or red pepper vinaigrette would also be excellent.

Olives – Any kind of stuffed olive would work great in this Keto Antipasto Salad. If you want to use kalamata or green olives, remove the pits before adding to the salad.

Cheese – I really like to use feta cheese in salads, and think it pairs perfectly with this Italian Chopped Salad. Other cheese options that would be excellent would be blue cheese or bocconcini.

Salami – Prosciutto salami is my favourite for this Keto Antipasto Salad because it’s a mild salami with chunks of prosciutto running through it. Can’t find it? Give any other salami a try. If you like some heat, try calabrese or hot genoa. Mild? Pepper salami, mild genoa or bagged summer salami are excellent as well.

How to make Italian Chopped Salad

This salad is so fast and easy!

Wash the romaine, pat it try, then chop it into fine ribbons. Place inside the mixing bowl.

Thinly slice the red pepper and red onion, then add them to the mixing bowl with the artichoke hearts, olives and feta cheese. Stack the prosciutto salami, chop it into thin ribbons, then add it to the bowl.

Drizzle in the salad dressing. Toss, taste, then add more salad dressing if desired.

Divide between four salad bowls then garnish with freshly minced Italian parsley or basil.

Frequently Asked Questions

Does antipasto salad have carbs?

You’ll find small amounts of natural carbs in the vegetables, though the olives and feta cheese have none. Be sure to buy a dressing with no added sugar, or make your own Keto Italian Dressing.

What other antipasto ingredients are keto friendly?

Besides the goodies in this Keto Antipasto Salad, other ingredients you could sub/add are marinated mushrooms, any type of olive, bocconcini cheese, sundried tomatoes or pepperoncini peppers.

Can you eat Italian dressing on keto diet?

Most Italian dressings off the shelf contain sugar and other unnecessary preservatives. That’s why it’s best to make your own Keto Italian Dressing at home. Luckily it’s super fast and easy to make.

What are some other keto dressings to try with this Keto Antipasto Salad?

Nothing is going to pair better, in my opinion, than this Keto Italian Dressing. It is a bright, flavourful dressing and made with ingredients like red wine vinegar, olive oil, spices and freshly squeezed lemon juice. Plus, it can be whipped up in just 5 minutes!

  • 1 head romaine lettuce
  • 160 grams prosciutto salami *see note 1
  • ½ cup marinated artichoke hearts
  • ½ cup manzanilla olives *see note 2
  • ¼ cup sliced red onion
  • 1 small red pepper
  • ½ cup feta cheese *see note 3
  • 1 cup grape tomatoes
  • Italian parsley
  • Keto Italian Dressing *see note 4

  5. I’m a huge fan of romaine in this Keto Antipasto Salad, however, any type of leafy green would be great, such as leaf lettuce, kale, spinach or a combination of your favourites.
  6. Dial back the carbs by skipping/scaling back on the red onion and artichoke hearts, both of which have the highest amount of the carbs in this Keto Antipasto Salad.
