To make this red chimichurri sauce recipe you need several ingredients. Put the following ingredients on your grocery list:

  • Red bell pepper
  • Small onion
  • Garlic
  • Jalapeño pepper
  • Balsamic vinegar
  • Ground cilantro
  • Cumin
  • Oregano
  • Smoked paprika
  • Chili flakes
  • Salt

How To Make Red Chimichurri

  1. If you want to make this recipe start with peeling the onion. Finely chop the onion and set it aside.
  2. Wash a pointed red pepper with cold water. Half the pepper, stem, and seed and coarsely chop it up. Put the bell pepper in a blender.
  3. Crush the garlic in a pestle and mortar and add it to the blender. Then add all the spices, cilantro, parsley, and salt into the blender as well.
  4. Pulse the blender a couple of times until you have a fine sauce with the consistency of salsa. Perfect if you like a more rustic sauce with a lot of texture.
  5. If you want a smooth sauce just leave the blender on a little longer. That is all, your Chimichurri Roja is done and ready to serve.

This is a spicy sauce due to the jalapeño. I consider this a mildly hot sauce but you can make this sauce as spicy as you want. If you do not like hot and spicy you can decide to leave the jalapeño out or not make this recipe at all.

I suggest you start with a small amount of spice and increase it to soothe your taste buds nothing is mandatory so give it a try. When you use to marinate your chicken or beef steak it will become less intense and not as hot.

How To Store Chimichurri?

If you make a big batch or have leftover marinade you have several ways to store this marinade:

  • Refrigerator – you can store the marinade in an airtight food container or in these Mason Ball jelly jars. You can store it in the fridge for up to a week
  • Freezer – if you want to keep it longer you can store it in the freezer. Use dried spices and no fresh ones. When you thaw there will be more moisture so drain it before using it. Put it in a food container and store it for up to 3 months

Red Chimichurri

Red chimichurri sauce is just as good or even better than authentic green chimichurri. Use it as sauce, marinade or dip.

Ingredients

  • 1 red bell pepper
  • 1 small coarsely chopped onion
  • 1/2 tablespoon ground cilantro
  • 1 tablespoon balsamic vinegar
  • 2 garlic cloves chopped
  • 1 jalapeño pepper
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon chili flakes

Instructions

  1. Peel the onion and chop. Coarsely chop a stemmed, seeded pointed red pepper
  2. Put in a blender. Crush the garlic in a pestle and mortar and add to the blender
  3. Add all the spices, cilantro, parsley, and salt at once
  4. Let the blender first pulse and then run until you have a fine sauce with the consistency of sals
  5. Ready to serve
