Brisket is one of the best southern summer comfort foods. It is slow-roasted in the oven with a spicy dry rub and topped with barbecue sauce. Traditional brisket is usually cooked in a smoker, but I used a smaller sized brisket that can be roasted in the oven instead. I made this brisket for the fourth of July a couple of weeks ago, it is a great summer meal that can feed a crowd. And if you have any leftovers, it makes for a great brisket sandwich the next day.

I put a dry rub on the brisket before baking. The dry rub is a spice mixture of salt, pepper, garlic powder, onion powder, chili powder, paprika and brown sugar. The spice mixture gives the brisket a spicy barbecue flavoring. Rub the dry rub onto the brisket and place it into a large baking dish. Cover the baking dish with foil and slow roast it in the oven for 3-4 hours, depending on the size of the meat. I used a three pound brisket that only needed about 3 hours. But if you are using a larger brisket adjust the time, about one hour per pound.

Uncover the brisket and an optional step is to spread the barbecue sauce over the top of the brisket. Although you can also put the barbecue sauce on after baking if you prefer. Spreading the barbecue sauce on top before baking creates a caramelized top. Place the brisket back into the oven for another 40-60 minutes uncovered, until the brisket is fall apart tender. Serve with more barbecue sauce if desired and all of your favorite barbecue side dishes.
