Can you imagine taking a bite of this sweet crunchy tortilla and then tasting the warm apple pie filling inside? Make it for your family or your next dinner party. Everybody will love this sweet enchilada dessert. So, are you ready to learn how to make apple enchiladas? Let’s get started!
What You Need For This Recipe
For this sweet dessert recipe, you need the following ingredients so put them on your grocery shopping list and have them ready to go on your kitchen counter:
- Filling – for this recipe, I use homemade apple pie filling you can also use store-bought
- Tortillas – use medium-size flour tortillas
- Butter – you need unsalted butter
- Sugar – granulated sugar to sprinkle on top
- Pecans – finely chop
- Cinnamon – for the authentic apple pie flavor
- Caramel or syrup – to drizzle on top

How To Make Apple Enchiladas
- To make this recipe start with peeling the apples and slicing them into small pieces. Sprinkle the apple with lemon juice and set aside.
- Combine water and the arrowroot in a small saucepan. Whisk and add sugar and cinnamon. Put on low heat and add the sliced apples.
- Simmer for 10 minutes on low to medium heat and stir occasionally until the apples fall apart. Take the pan off the heat and let it cool slightly.
- Stir half a cup of chopped pecans through the apple filling. In the meantime, preheat your oven to 350℉/175℃ and line a baking tray with parchment paper.
- Heat butter and take the flour tortillas. Brush one side with the melted butter. Mix sugar with cinnamon and coat the butter side of the tortillas with this mixture.
- Put the sugar-coated side of the tortilla on the baking tray. Take two tablespoons of apple pie filling and put on one end of a tortilla.
- Roll the tortilla from the end containing the apples. Put the tortilla, seam-side down, on the baking tray. Repeat for remaining tortillas.
- Put the baking tray in the oven and bake for 15 minutes. Take the apple enchiladas out of the oven and drizzle with caramel sauce or syrup.
- Chop the remaining pecans and sprinkle the apple enchiladas dessert with the chopped pecans and serve.
Easy Apple Pie Enchiladas
It is time for a great Mexican apple dessert using tortillas. If you never made a tortilla dessert before this recipe is a great dessert to start with.
Whether you call them apple tortillas, apple pie tortilla wraps, taquitos, or apple pie enchiladas the main idea is the same. Apple pie filling is wrapped inside a tortilla and warmed through before serving.
The taste of the tortilla is quite neutral and therefore perfect to turn it into a sweet dessert. This sweet recipe is made with apples using homemade apple pie filling.
However, you can easily adapt this recipe and use other fruits. Think about fruits like:
- Pear
- Rhubarb
- Strawberries
- Peaches
- Cherries
- Bananas
The filling is a warm, soft, and delicious contrast to the crunchy crispy sweet tortilla exterior. Especially when you sprinkle the enchiladas with some cinnamon sugar.
How To Store Sweet Apple Enchiladas
This is a great apple enchiladas recipe to make ahead and store until you want to serve them. You can store them:
- Refrigerator – if you want to eat them within two days you can store the enchiladas in the fridge. Put them in an airtight plastic container. You can also cover the sweet tortillas with cling film to prevent them from drying out
- Freezer – when you baked the apple enchiladas let them cool. You can also freeze them unbaked and warm them when you are ready to serve. Do not cover them with syrup or caramel but wait until you serve this dessert before you decorate it
How To Reheat Apple Enchiladas
There are several ways to reheat your enchiladas. If you froze the enchiladas let them thaw first. You can choose between:
- Oven – to warm apple enchiladas preheat your oven to 320℉/160℃. Wrap the enchiladas in aluminum foil and put the enchiladas in the middle of the oven for 10 minutes or until warm inside. If you warm already oven-baked tortillas unwrapped you run the risk of the tortillas getting hard on the outside so wrap them in foil. When you reheat unbaked enchiladas, you can bake them as described in the recipe
- Air Fryer – you can also warm them in the Air Fryer. Preheat the Air Fryer to 300℉/150℃ for 5 minutes then put them wrapped in aluminum foil in the basket and warm for 7 minutes or until they are warm inside
- Microwave – my least favorite method but still a way to warm this dessert. Put the enchiladas in a food container and cover them with cling film or put the enchiladas in between wet paper towels and warm them in 30-second stints. Check to see if it is warm enough
Can You Use Fresh Apples In Apple Enchiladas?
You can but you have to be aware that during the time you bake the enchiladas, the apples do not get very soft. Just like you would bake an apple pie the apple filling needs time in the oven to soften.
So, if you do not like soft pie filling then you can use fresh apples and use it as filling. If you want a soft apple filling it is recommended to make your apple pie filling first and then make your enchiladas.

Apple Enchiladas
A great sweet tortilla dessert recipe. Take a look at this easy sweet apple enchiladas recipe. So easy to make in the oven.
Ingredients
- Apple pie filling:
- 2 apples peeled, cored, and cut into pieces
- 1 tablespoon brown sugar
- 1 tablespoon lemon juice
- 1 teaspoon arrowroot
- 1 teaspoons cinnamon
- ½ cup chopped pecans
- ½ cup of water
- Tortillas:
- 4 eight-inch flour tortillas
- 2 tablespoons unsalted butter melted
- 3 tablespoons granulated sugar mixed with 1 ½ teaspoons cinnamon
- Topping:
- Caramel or syrup
- ¼ cup chopped pecans
Instructions

- Put the sugar-coated side of a tortilla and put on the baking tray. Take two tablespoons of apple pie filling and put on one end of a tortilla
- Roll the tortilla and roll from the end containing the apples. Put the tortilla, seam-side down, on the baking sheet. Repeat for remaining tortillas
- Put the baking tray in the oven to bake for 15 minutes. Take the apple enchiladas out of the oven and drizzle with caramel sauce or syrup
- Chop the pecans and sprinkle the apple enchiladas with the chopped pecans and serve.

08/24/2019 at 4:49 pmThe recipe calls for 1/2 cup chopped pecans in the first part and then 1/4 cup chopped pecans in the second part. Where does the 1/2 cup of pecans go? I see that you sprinkle with chopped pecans after baking and drizzling, but where do the other ones go?

You stir them through the apple pie filling before you make the apple enchiladas. The remaining chopped pecans are for decoration.
