Easy & Cheesy – 10 Minute Keto Grilled Cheese

Ready in minutes, this easy Keto Grilled Cheese makes a quick and satisfying meal!

Yummm toasty cheesy goodness!! There aren’t many things better for lunch than a classic grilled cheese sandwich.

I like my Keto Grilled Cheese with Hamburger or Chicken Soup but is super filling, so this sandwich is also excellent all by itself, especially for a quick lunch on the go. You can keep it simple with just cheddar, or spruce up this Keto Grilled Cheese with meat, veggies and/or different types of cheese.

Keto Grilled Cheese Ingredients

  • almond flour
  • parmesan cheese
  • baking powder
  • onion powder
  • sea salt
  • grated cheddar cheese
  • olive oil
  • an egg
  • cheese of choice for sandwich
  • mayonnaise
  • meat and/or veggies if desired

How to make a Keto Grilled Cheese

Start by heating a skillet on medium high heat, then slice up the cheese for the sandwich.

Grab a square microwave safe dish and add the almond flour, parmesan, baking powder, onion powder and salt. Give it a whisk then mix in the shredded cheddar cheese. Crack in and egg, add the olive oil and whisk until fully combined.

Bread batter all mixed up, ready to be cooked.

Microwave for 90 seconds then let the bread rest for a few moments to cool.

Flip the container over so that the bread pops out. You may need to run a knife along the side of it to make sure the edges haven’t stuck to the sides of the container.

Allow the bread to cool for a minute or two. Using some accuracy, slice the bread in half, through the middle, so that you have two thin square slices of bread.

Add 1/2 tbsp butter to the hot skillet, stir it around, then place both slices of bread onto the hot butter. Cook for a couple of minutes until the bread is toasty, then flip them both over. Cover both breads in mayo then lay the cheese on one side.

Flip the other bread over top of the cheese so that the mayo side is laying on top of the cheese.

Fry for another minute or so until the bottom of the sandwich is toasty. Flip the sandwich over and cook for another minute or two until the bottom bread is toasty and the cheese is melty.

Expert Tips

After many Keto Grilled Cheese Sandwiches, here is a list of tips and tricks I’ve come up with along the way to help you get the most out of yours the very first time.

  1. Do you like extra melty cheese? I do! It helps to leave your cheese at room temperature for an hour or two so that it is warm. This makes the cheese super melty when you go to make your grilled cheese.
  2. If the bread seems wet after the 90 seconds in the microwave, add an additional 15 seconds to ensure it is cooked all the way through.
  3. Make sure your skillet is nice and hot before adding the butter, then the bread. If it is not hot enough, the bread won’t toast properly, making it soggy and sad. You want the bread to end up with that beautiful deep golden colour.

There are so many different types of cheese out there that would be an excellent option for this grilled cheese. Besides cheddar, I highly recommend you try mozzarella, swiss gruyère, brie, aged cheddar or gouda!

Instant Pot Pulled Pork

Meat

Try some slices of deli ham for a classic option, pepperoni or salami for something different or Pulled Pork for an extra delicious version of a grilled cheese.

Veggies

Want to add a little extra to your grilled cheese? Roasted peppers, sliced tomatoes, artichokes, grilled eggplant, avocado, shredded cabbage and spinach all make excellent additions to this Keto Grilled Cheese.

What to pair with Keto Grilled Cheese Sandwiches

Soup! My absolute favourite dish to pair with grilled cheeses sandwiches is definitely soup. Here are my favourites:

Don’t have a microwave?

No problem! Well, unless you are hangry, then there could be a problem. You can absolutely make this in the oven, however, your Keto Grilled Cheese won’t be ready in 10 minutes.

Here is how to make it in the oven:

Heat the oven to 350° and spray a square glass (oven safe) container with olive or avocado spray oil. In a bowl whisk the almond flour, parmesan cheese, baking powder, onion powder and salt until combined, then mix in the cheddar cheese.

Whisk in the egg and olive oil until fully mixed then pour into the prepared dish. Bake for 15 minutes, until the egg is cooked all the way through. Continue on with the remaining instructions in the recipe card.

Ingredients
  

  • 50-75 grams cheddar cheese sliced
  • 1 tbsp mayonnaise

Bread

  • 3 tbsp almond flour
  • 1 tbsp parmesan cheese
  • ¼ tsp baking powder
  • 1 pinch onion powder
  • 1 pinch sea salt
  • 1 tbsp cheddar cheese grated
  • 1 egg
  • 1 tbsp olive oil
  • ½ tbsp butter

Instructions

      I wish I could post the pic I took of this. I have been making this almost every other day for a week, I love it! A couple things I did, I used a larger Tupperware, and made two “pieces” of bread, and didn’t cut them, so I could have a bigger sandwich. The other thing was I fried up some deli meat and put it between the melting cheese. I microwave for 99 seconds, perfect for my unit.

      Other than that I follow the recipe exactly! I love this, and I like to dip it in sour cream.

        I will…. we’ve been KETO for close to two years. It works well with my husband’s health and I follow along. But sometimes… you just miss some foods like grilled cheese So, I’m anxious to try it and hopefully, he’ll like to have it once in awhile. Just meat (few veggies because he is super sensitive to carbs) gets old. It just does. Thank you for putting up with me.

    Hi, could you post the recipe in grams? I’m from Poland, don’t have measuring cups, and spoons come in different sizes. When I try to follow the recipe my batter comes out very thick and the sandwich won’t come out of the glass dish. I have to help it 😉 It’s still delicious, though.

      Hey Pawel, I used a converter so hopefully they are accurate for you! Here they are in grams:
      18 g almond flour
      14 g parmesan
      1.2 g baking powder
      14 g cheddar cheese
      13 g olive oil
      7 g butter
      I will say that the mixture should be thick. If you still have troubles you could lightly grease the container with olive oil. I hope it works out for you!

    Is there anything I can use instead of the mayo? I’m not really a fan of it. Or would it be okay to leave it off?

      The mayo helps the cheese get a little more melty and adds flavor. You can do this with any condiment really. You can leave it out, or you could swap it with mustard, or ranch, or (pretty much any dressing you like the flavor of). There’s really no wrong way to do it when it comes to the filling!!!

    Very yummy, good bread texture and super easy! I didn’t have a glass sandwich size container so I tripled the recipe and used an 8×8 square glass baking dish. This was perfect for making 2 small sandwiches the size of a slice of American cheese.
    Will definitely make it again. Would love to try a keto rye bread version.

    I’ve tried dozens of keto sandwich breads, many in the microwave, and this one wins, hands down. I was skeptical, especially when it came out looking more like a microwaved omelette than any kind of bread, but after slicing and frying in the skillet, it was awesome. Totally took care of my craving for a crispy, gooey grilled cheese. I think the secret is the cheese in the bread that gives it the crunch.

    I used a round ramekin and made more of a bun shape since I didn’t have a square dish that was small enough. Worked great.

    Of you wanna make it extra crispy add shredded cheese to the outside of the bread when your melting the cheese so it becomes like a cheese crisp on the bread it’s so good!

    Brillant idea and fast , It was not as tasty as I had hoped. Maybe I did something wrong but it left a terrible after taste after each bite and , I couldn’t figurewhat the taste was but then again its my first time for using almond flour and, maybe its normal.
    I think I will tweak it a bit and see what happens because it’s really easy and fast .

    Hi Aleta, thanks for the recipe! I am very glad I found it. I liked it a lot, but my sandwich turned out a bit dry. The bread dough also looks way drier than the one on your foto. I know that different kind of almond flower absorb liquid differently. Is that the problem here? Can I just add some water? Or maybe I cooked it too hot? My microwave doesn’t have only an on/off button, but you can choose different wattages . Do you have an idea how much power your microwave has?

    I love this recipe. I’ve done both in the microwave and baked in my air fryer. I’ve been using it for regular sandwiches as well. It does refrigerate well. I just toast it in my air fryer after taking it out of the fridge.

    This was great! I was a little apprehensive about slicing the “bread” as instructed so I cooked it in a 7″ square Corning dish and cut it in half on the flat side. I think next time I will mix it in a bowl and use nonstick spray in the dish so it pops out easier, but it wasn’t too difficult. I can’t wait to try this with bacon.

    Late to the party here, but I wanted to tell you how delightful this recipe has been. Grilled cheese is my comfort food and sticking to keto would be so much harder without it.

    I like the original recipe, but for less carbs I have also subbed 1.5tbsp of lupin flour instead of the almond. A 1/4 tsp of everything bagel seasoning in the “bread” mixture adds a nice touch.
