Baked BBQ Ribs & Plantain Fries

Being an island girl means that bbq is my nature, so it’s only natural for me to share these bomb baked bbq ribs & plantain fries with you guys.

Whenever I go back to the islands, the first thing I look forward to eating is some bbq ribs. There is nothing better than stuffing your face with them. Unfortunately, I don’t own a grill in my apartment so I settle for baked ones. I wanted to share a twist on the recipe by giving you guys a 2 in 1 recipe. So I will share with you guys these baked bbq ribs & plantain fries.

Baking these ribs for 2 hours allow them to come out tender and flavourful. As I was cutting them, they literally fell off the bone and that made my heart smile. Everything from this recipe was perfect, from the dry rub to the bbq sauce.

The major player in this game is the dry rub. If you have a good dry rub, you will end up with some delicious stack of ribs. Even if you aren’t baking your ribs, I highly recommend using a dry rub to grill them.

TIPS & TRICKS:
  • Seasoning: I like a certain blend for my ribs. Thanks to experimenting, I’ve found that the spices I used are the best and I end up with a delicious stack of ribs. I used salt, brown sugar, allspice, garlic powder, paprika, ground cayenne, black pepper and dried thyme.
  • Worcestershire sauce: I love using this not only for the flavor but it helps with the dry rub sticking to the meat. Which will dissolve into the meat.

I know the 2 hours of baking sounds like a lot, however it is not only necessary but worth it. The reason why it takes that long to cook the ribs is because of the fact that there isn’t a grill. Grilling the meat will take less time, usually.

Covering the ribs in foil will not only control the juices from staining your oven but the heat will help to cook the ribs and ensure the meat comes out tender and flavorful.

Throughout this post, I’ve talked about the ribs but let us talk about the other star, the plantain fries. Being from the Caribbean means that plantain is a staple side. You cannot enjoy a meal without plantain. I grew up eating plantains two ways only: boiled or fried. However, in this recipe I decided to bake them and I loooooved them with this recipe. Not only are they healthier than the fried version but it’s a creative way to enjoy fries.

Of course, the fries need a sauce. So staying within the theme of bbq, I dipped my plantain fries in my famous Spicy Pineapple BBQ Sauce. I recommend you trying my recipe because it will change your life.

Baked BBQ Ribs & Plantain Fries

Servings 8 servings
Prep Time 20 minutes
Cook Time 2 hours 20 minutes

Ingredients

Dry rub:

  • 2 tbsp Brown sugar
  • 2 tsp Salt less or more
  • 2 tsp Dried thyme
  • 1 tsp Ground cayenne pepper
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1/2 tsp Black pepper
  • 1/2 tsp Ground allspice

Ribs:

  • 1 stack Spare ribs
  • 1 cup Barbecue sauce
  • 2 tbsp Worcestershire sauce
  • Dry Rub

Plantain fries:

  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2-3 Plantains (not completely ripe and not totally green)

Instructions

  • Preheat your oven to 350°F/180°C. Line a baking tray with parchment paper then foil paper.

Dry rub:

  • Mix all the seasonings in a bowl. Once all the seasonings are mixed well together, set it aside.

Baking the ribs:

  • Place the ribs on the baking tray, pat dry before brushing half of the Worcestershire sauce unto the ribs.
  • Brush on 2 tbsp of the dry rub, making sure to cover the ribs. Flip the stack of ribs and repeat these steps on the other side.
  • Once the meat is fully covered on both sides. Cover with an additional foil paper, make sure to cover well.
  • Bake for 2 hours.

Covering with the sauce:

  • After the 2 hour mark remove from the oven and brush with bbq sauce on each side. Return to the oven for 10-15 more minutes at 350°F/180°C.

Plantain fries:

  • Cut the ends off, then cut through the skin from the top to the bottom and then peel it off.
  • Cut the plantain into two, then cut each half in half. Slice the plantains thinly into fries shape.
  • Season the fries with salt, pepper and olive.
  • Place on a baking tray lined with parchment paper for 15-20 minutes at 200°C/400°F.
