Corn on the cob is a classic side dish to serve for any summer meal. These corn on the cobs are covered with a BBQ butter spread and oven roasted creating a buttery summer side dish. I cooked the corn in the oven, but they can also be grilled, for a more traditional grilled taste. They make a great addition to chicken or any other summer meal.

I used small frozen ears of corn, although you can use fresh ears of corn instead. Mix softened butter with salt, pepper, brown sugar, garlic powder, onion powder and chili powder. These seasonings combined create a sweet and spicy flavor combination that will make you think of summer barbecues. The ears of corn are wrapped in foil and roasted in the oven for 35-40 minutes until the corn is tender. You can also grill these, just wrap the butter coated ears of corn in foil and grill them on an outdoor or indoor grill until tender.

Ingredients
  

  • 4 small frozen ears of corn
  • 1/4 cup butter, softened
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon brown sugar

Instructions
 

  • Preheat oven to 400 F. In a small bowl, mix softened butter with seasonings. Spread butter mixture over each ear of corn. Wrap each ear of corn in foil. Bake for 40-45 minutes.
