Happy Wednesday guys! Today’s recipe is Mascarpone Peach Cake – light and delicious treat, perfect for the hot Summer days. 👌
So I made this lovely dessert last weekend and it was so on time with the heat we had on Saturday. It was soo hot but we managed to stay cool somehow (a few cold drinks and some ice cream did the job 😃 )and had so much fun in the sun. Actually, we had an amazing weekend – finished it off with a peaceful picnic in a beautiful park. I’m really looking forward to the next one now. Anyhow, back to the recipe now..
This Mascarpone Peach Cake is very light, there’s barely any sugar in it but at the same time it’s creamy, fruity and just delicious. No to mention how it is to make – all you need is cream and mascarpone, some ripe peaches and digestive biscuits and butter for the bottom layer. Keep it in the fridge for a couple of hours and it’s good to go. Yumm! 🤤

It seems we’ve got another busy one ahead! As the school term is coming to an end , the kids are getting busier too. Also, we’ve got quite a few presentations and picnics to attend.
