We fell in love with this combination in Denmark; everything started with giant cinnamon rolls purchased at their supermarket and the wonderful flavours released for our breakfast.

The other day, our host made even bigger surprise; he upgraded cinnamon rolls combined with cherry cobbler and it gave us completely new perspective on desserts since we were not used to anything like this before.

So, here I am, presenting his version made in brownie pan ( 7 x 7 inches ).
As about the ingredients, if cherry jam is not at hand you can warm cherry pie filling until it starts to bubble and add ½ tsp cinnamon into the mixture. I have learned this lesson as a little child, watching my mother combining the ingredients for Black Forest Cake. Both jam and pie filling are all right as long as they are not overpowered with sugar.

Cherry flavours match so well with cinnamon ones ! Then, this base is upgraded by cinnamon rolls made of store bought puff pastry or with canned cinnamom rolls. I used puff pastry to roll since I had one pack in the fridge.
Some rolls will be left. I simply baked them after Cinnamon Rolls Cherry Cobler was done so we had next day breakfast problem solved.

Ingredients

  • 1 package puff pastry, store bought ( 16 x 10 inches )
  • 1 ½ Tbsp cinnamon
  • 1 tsp cardamom
  • 2 Tbsp sugar
  • 2 Tbsp butter ( vegan version may be used )
  • 1 Tbsp corn starch
  • 1 ½ cup cherry jam + ½ tsp cinnamon
  • Fresh cherries, optional
  • Ingredients for the glaze :
  • 3 Tbsp icing sugar
  • 1 ½ tsp fresh lemon juice

Instructions

  1. In a skillet, bring cherry jam to bubble and add cinnamon. Leave aside.

  2. In a small pot, on low heat, combine cinnamon, cardamom, sugar, butter and cornstarch. Leave aside.

  3. Unroll the store bought puff pastry and spread cinnamon mixture over it.

  4. Roll up jelly roll style starting with a long side.

  5. Cut into slices 3/4 inch wide.

  6. Transfer cherry jam into the baking dish; add fresh cherries if you like.

  7. Arrange nine raw cinnamon rolls cut side up on cherry jam.

  8. Bake for 25 minutes or until puff pastry cinnamon rolls are done.

  9. Take out of the oven and leave aside.

  10. In a small cup, combine icing sugar and fresh lemon juice for the glaze.

  11. Drizzle the glaze over the rolls and serve.
