Everyone will go crazy for these strawberry kiwi popsicles – they’re beautiful, vibrant, and all natural! Easy to make with just four ingredients, and much healthier than their store-bought cousins!

It’s hot. No, not hot – sweltering. You desperately want to be outside, or more precisely, to get the kids outside, but you know they’ll be back in the blink of an eye, swearing up and down that they’re dying of heat and begging for an icy cold treat. Sound familiar?

Or maybe kids aren’t even part of the equation! Maybe it’s just you who are sweltering in the sun and wishing you could kick back for a moment, legs sticking to the patio furniture, sweat still trickling down your neck, but without a care in the world at this exact second because you’re licking a sweet, summery, ice-cold popsicle.

Unless you’re the type to take a big bite out of it. In which case, just the thought of you sends a stone-cold shiver running down my spine! I’ve got goosebumps just thinking about it!

For any of these hot summer scenarios, we’ve certainly been known to stock the freezer with store-bought fruit pops and to sponsor the occasional ice cream run. But, wouldn’t it be amazing to have something fun in your freezer that you actually feel GOOD about handing to your sweaty offspring?

Strawberry Kiwi Popsicles: Shopping List

Making these could not be easier. You’ll need just four ingredients:

  • Strawberries: Just cut off the stems!
  • Lemon juice: Fresh is lovely, but refrigerated will do.
  • Sugar or honey: I usually use about two tablespoons of sugar or honey per one batch of 10 popsicles. Of course you can easily adjust the amount of sugar to your taste and preferences. If you have super ripe, sweet strawberries, you may not need to add any at all!
  • Kiwis: Peeled and sliced. You could leave these out if you’re not into kiwi, or sub with another fruit, but I just love the strawberry-kiwi combo, both for taste and for looks!

You’ll also need:

  • Blender.
  • Popsicle mold! If you don’t have one, rest assured, it’s the rare one-task kitchen gadget that totally deserves the space it takes up in your cabinet. We use this one*. It’s inexpensive, compact, and works great!
  • Extra wooden popsicle sticks* are cheap and biodegradable. And convenient to have in surplus for random craft projects. 🙂

And once you have a popsicle mold, there’s no end to what you can do. I suggest creamy key lime pie popsicles next – the tiny little graham cracker “crust” is to die for!

How To Make Homemade Strawberry Kiwi Popsicles

Are you ready? This is easy!

  1. Cut the tops off the strawberries, then blend them with the lemon juice and sugar or honey into a smooth puree.
  2. Peel and slice kiwis, and nestle them into the wells of your popsicle mold. They should naturally stick to or lean against the sides.
  3. Pour the strawberry puree over the kiwi to fill each well.
  4. Cover, add sticks, and freeze! I usually try to leave them overnight, but you could take them out after about four hours in a pinch.

Struggling to get your frozen popsicles out of the molds? Either hold the outside of the mold under some hot running water for 30-60 seconds, or submerge the molds in a large bowl of warm water for 60 seconds or more. Wiggle the popsicles until they pop out easily. Voila!

Strawberry Kiwi Popsicles

Ingredients

  • 2 pints fresh strawberries (about 5 cups) stems removed
  • 2 tablespoons sugar or honey
  • 2 tablespoons lemon juice
  • 2 kiwis peeled and sliced

Equipment

  • Popsicle Mold

Instructions

  • In a food processor or blender, combine strawberries, sugar, and lemon juice. Process until smooth.
  • Nestle kiwi slices into a popsicle mold, pushing them gently up against the sides. Pour in the strawberry puree, cover, add wooden sticks, and place in the freezer.
  • Freeze for at least 4 hours or overnight, until popsicles are solid. To remove popsicles easily, run the outside of the mold under warm water for 30-60 seconds, then pull the popsicles out. Enjoy!
