Shrimp Quinoa with Vegetables

Hello Everyone! Today’s recipe, Shrimp Quinoa with Vegetables, is super easy to make, it’s light for your stomach, taste amazing, and is a perfect summer recipe.

This yummy meal goes perfectly with some fresh vegetables or, in our case, with Basil Tzatziki Sauce that we had leftover from a day before :). If you haven’t tried our Tzatziki recipe, check it out, you won’t regret :).

We mentioned this a dozen times now, but we are not huge fans of salt, we basically don’t use it, and if we use it, it’s a very small amount. Knowing this you can guess that we haven’t included salt in this recipe. There is no need to. Shrimps are a type of sea fish which is already salty, so no need for extra salt in this case.
Shrimp Quinoa
In this delicious recipe, we used quinoa as our grain. You can use rice or anything else you like instead.

What we love to do is to meal prep quinoa. We usually do it on Sunday and have enough to last the whole week. This is what we did here, we used our already prepared quinoa.




 

 
In our opinion, quinoa tastes the best at room temperature. Eating it when it’s still hot is not our thing. 🙂

Vegetable Shrimp
Prep time: 5 min   Cook time: 20 min   Total: 25 min   Servings: 1




 

 

INGREDIENTS

  • 2/3 cup (120 g) cooked quinoa
  • 4.23 oz (120 g) shrimps (prawns)
  • 2.5 oz (70 g) fresh oyster mushrooms
  • 1 small tomato
  • 1/2 green pepper
  • 3-4 fresh basil leaves
  • 1 tablespoon olive oil

INSTRUCTIONS

  • We are not going to add instructions on how to cook quinoa, we assume that you already know that. For this recipe, you’ll need cooked, room temperature, quinoa.
  • Into a large saucepan add olive oil and put over medium heat. Meanwhile chop all vegetables, herbs, and mushrooms.
  • Add tomatoes to a pan an cook for about 2-3 minutes (cover the saucepan). Then add oyster mushrooms and pepper and cook for 5 minutes, stirring occasionally, add water if necessary.
  • At the and add shrimps (prawns) and basil and cook for another 3-4 minutes with a covered saucepan.
  • When done, let it cool for a few minutes.
