These Keto Chicken Lettuce Wraps are packed with deliciousness and smothered in peanut sauce! I honestly don’t think life gets much better than when you’re sinking your teeth into one of these beauties and the flavour explodes into your mouth.

So. Dang. DELICIOUS!

It’s pretty great when something this healthy is also this tasty.

The inspiration for these Keto Chicken Lettuce Wraps came from my lovely friend over at Marrow Holistic Health. She had my family over for dinner one night and made up some drool worthy Pad Thai Spring Rolls from the Minimalist Baker.

They were sooo yummy, I knew I had to make some low carb peanut lettuce wraps so that I could indulge.. daily.. twice daily if I wanted to, in fresh peanuty heaven.

Why this recipe works

  4. Chopped cashews bring an extra salty crunch to the dish, satisfying that specific crave, sending off even more of those feel good sensations previously brought around by all that peanut sauce.

  • butter lettuce
  • chicken breast – you can use leftover chicken if you have some
  • carrot – can skip if your macros are tight
  • enoki mushrooms
  • arugula
  • cashews
  • cilantro

Keto Peanut Sauce

I am so crazy addicted to this stuff! Honestly cannot get enough of this Keto Peanut Sauce.

  • organic peanut butter without additives
  • soy sauce
  • honey substitute
  • water
  • rice vinegar
  • sesame oil
  • red pepper flakes
  • fresh ginger
  • garlic

Organic peanut butter

It’s really important to buy organic peanut butter, not just because the cheap stuff is basically just sugar. Read more about why from BodyUnburdened.

Honey Substitute

Yes, there really is a yummy honey substitute you can buy! It’s made by Nature’s Hollow and is a honey flavoured syrup that is sweetened with xylitol.

I get mine from amazon! Can’t find it there? If you live in Canada, it can also be found at the LowCarbGrocery , LowCarbCanada or in the USA it can be bought directly through Nature’s Hollow.

How to make Keto Chicken Lettuce Wraps with Peanut Sauce

These may be fully loaded, but, luckily, they take no time to create! Let’s start with the Peanut Sauce; get it all made and refrigerated so that it is ready to go for the lettuce wraps.

Keto Peanut Sauce

I like my sauce to be super creamy, so I use an immersion blender. You can also use a blender or just whisk the sauce together; totally up to you.

To a small mixing bowl or blender add the peanut butter, honey substitute, soy sauce, water, rice wine vinegar, sesame oil and crushed red pepper. Peel the garlic and ginger, then grate each using a zester or the small side of a cheese grater. Add them to the bowl.

Puree the sauce until smooth using an immersion blender (or blend using a blender). That’s it! Easy, hey?

Keto Chicken Lettuce Wraps

Prep the chicken

If you have leftover chicken, that’s great, you can absolutely use it in this recipe. Other wise, take your boneless skinless chicken breasts and slice them in half horizontally. Season each filet with salt and pepper and fry them in a hot skillet until the internal temperature reaches 180°.

Set them aside to cool, then they can be sliced thinly.

Prep the veggies

I am lucky enough to have access to fresh butter lettuce right now.. I decided to try and plant them this spring and, oh my goodness, I have been seriously missing out! My little garden has flourished this year, providing me with an endless supply of lettuce, most importantly, butter lettuce!

Wash and pat dry the butter lettuce leaves, then set them up on a serving tray or platter. If your macros allow for it, the carrot brings an excellent crunch that is perfect for these keto lettuce wraps. Peel it and then chop it into matchsticks.

Rinse the enoki mushrooms through cool water and then chop off the root ends. Wash the arugula, chop the cashews and dice up the cilantro.

Build ’em!

Divide the chicken between the butter lettuce wraps. Spoon out 1 tsp Keto Peanut Sauce over the chicken on each wrap.

Divide the carrot between each and then do the same with the enoki mushrooms.

Top with a few arugula leaves then spoon out an additional 1 tsp Keto Peanut Sauce. Top each lettuce wrap with a large pinch of the chopped cashews and diced cilantro.

Serve with a bowl of extra Keto Peanut Sauce for dipping. Enjoy!!!

Ingredients
  

Keto Chicken Lettuce Wraps

  • 12 butter lettuce leaves
  • 2 lbs boneless skinless chicken breast can sub with cooked chicken
  • 2 pinches sea salt
  • 2 pinches black pepper
  • 1 tsp olive or avocado oil
  • 1 medium carrot
  • 50 grams enoki mushrooms
  • 1 ½ cups arugula
  • 2-3 tbsp salted cashews
  • ½ bunch cilantro

Keto Peanut Sauce

  • ½ cup organic peanut butter with no additives
  • ¼ cup soy sauce
  • ¼ cup water
  • 3 tbsp honey substitute
  • 1 tbsp rice wine vinegar
  • 2 tsp sesame oil
  • ¼ tsp crushed red pepper flakes
  • 1.5 tsp fresh grated ginger
  • 1 clove garlic

Instructions

  • Add peanut butter, honey substitute ( like this one from Nature’s Hollow ), soy sauce, water, rice wine vinegar, sesame oil and crushed red pepper to a small mixing bowl.

    I am not familiar with those mushrooms, never even seen them before but they are so awesome! I wonder if I’d be able to find them somewhere here in Sweden, but probably not or I would have already. Should check back the frozen section, but I’m afraid I won’t find them. I’m not low carb but I like the idea of lettuce wraps. Might try to make this (without those cool mushrooms though) next time I have chicken leftovers and see what my husband thinks 😀
