One-Pot Pea and Asparagus Pasta Recipe

I love a good Meatless Monday meal, and with summer being in full swing veggies stands are popping up everywhere!  This makes my heart very happy.  One of my favorite dishes to make is my One-Pot Pea and Asparagus Pasta Recipe


Simple, wholesome, ingredients isn't even the best part.  This One-Pot Pea and Asparagus Pasta Recipe is ready in in UNDER 20 minutes!  I know you're going to love this one so...

Let's Get Started!

For this amazing One-Pot Pea and Asparagus Pasta Recipe you will need a few simple ingredients:


  • 1 lb of Pasta
  • 4 c Vegetable Broth
  • 2 c Water
  • 1 Bunch of Asparagus, cut into bite-sized pieces
  • 3 Green Onions, sliced
  • 1 c Frozen Peas
  • 1 Tbsp Dried Chopped Onions
  • 1 Tbsp Garlic, minced
  • 1 Tbsp Fresh Basil, sliced
  • 8 oz Shredded Parmesan Cheese
  • Salt and Pepper, to taste


For this recipe you are going to need a nice, deep pan.  Everything will be made in this pan, so you are going to need some room.

Place the pan over Medium/High heat and add a little oil.  Allow the pan to get HOT.


While the pan is heating take a moment to cut the woody ends from the asparagus.


Next cut the asparagus into bite-sized pieces and slice the green onions.


Add the asparagus and peas to the hot pan and let cook 1-2 minutes.


Add the minced garlic and cook for another couple of minutes.


Add the dried minced onions.


Add the pasta.


Pour in the vegetable broth and water.


Give everything a nice stir.


Season with a little salt and...


Pepper.

Bring everything to a low boil.



Place the lid on the pan, slightly vented, and cook for 15 minutes stirring occasionally.


While everything is cooking you can prepare your basil.

Stack the leaves up.


Roll into a cigar shape.



 Cut into thin ribbons.


After the 15 minutes has elapsed add the basil and...


Parmesan cheese.

Stir everything together and you are ready to eat!


This is one of the most delicious meatless meals you are going to put on your table this summer.  I love that One-Pot Pea and Asparagus Pasta Recipe is so versatile too.  You could add bacon, chicken, ground beef, anything would be delicious.  If you want to keep this 100% Vegan you could replace the parmesan cheese with a 1/2 c of nutritional yeast.  No matter how you make it I know you'll love it so get in the kitchen and give it a try tonight!

  • 1 lb of Pasta

How to cook One-Pot Pea and Asparagus Pasta Recipe

  1. Place a deep pan over Medium/High heat and add oil.  Let the pan get hot.
  2. Add the asparagus and peas to the pan, cook 2-3 minutes. 
  3. Add the garlic to the pan and cook 1 more minute.  
  4. Add the minced onion, pasta, vegetable broth, and water to the pan.  
  5. Season with salt and pepper.
  6. Give everything a stir, bring to a low boil, cover, and cook for 15 minutes.  Stir Occasionally.  
  7. After 15 minutes add the basil and parmesan cheese.**
  8. Stir everything together. 
  9. Serve and Enjoy!

NOTES:

*For a vegan dish use a 1/2 c of Nutritional Yeast
**Add the nutritional yeast instead of the parmesan cheese for a vegan dish.
