Introducing to you the World’s Best Carrot Cake Recipe 

So, I’ve always been a carrot cake lover from the very beginning. However, not a cream cheese frosting fan but this cake totally needs this frosting, just takes it to the next level. 

I recently had an order for a carrot cake birthday cake covered with marzipan and fondant. At first, was skeptical about the flavors with so much drama happening in there. From the cashew marzipan, sweet sugar pastes to the cream cheese and of course the carrots in the carrot cake. But the end result was outstanding. I’m so glad my client got me into making it. 

Firstly, this recipe is easy, to the point and hassle-free. Also, has a mild spice flavor added to it which comes from the mixed spice powder. It adds a tinge of flavor, thus making it an important ingredient in this moist carrot cake recipe

Mixed Spice powder for the Carrot Cake

Recipe

Nutmeg 1 big size

Cloves 5 grams 

Cinnamon 10 grams 

Cardamom 5 grams 

Method

Grind all of the above spices together in a mixer grinder and store in a dry glass bottle. Use as required. 

Also, this mixed spice powder can be used in many recipes. Moreover, it can be used in a rich fruit cake or Christmas cake to add a tinge of flavor

Let’s Talk Ingredients

Carrots

So, the main ingredient in this recipe is the carrots. Therefore, make sure to use good quality carrots which are freshly purchased and grated. Also, the carrots need to be grated well, not too fine not to thick. If you grate it thick the carrots don’t blend well with the cake and would probably taste raw at one point. If you grate it too fine, the carrots would make the cake dense and mushy once mixed in the batter. So, grate the carrots just like you see in the video below

Cream Cheese Frosting 

First of all, to make the frosting we need cream cheese. Thus, the better the cream cheese, the better the frosting. So, use high-quality cream cheese and most importantly, make sure it’s at room temperature. Also, I like to use salted butter for my frostings, the butter should be at room temperature as well.

Recipe – The Best Carrot Cake

 

Ingredients 

For the cake: 

  • 2 eggs 
  • 200 grams castor sugar
  • 1/2 teaspoon vanilla extract
  • 200 ml oil (any unflavored oil)
  • 200 grams all-purpose flour
  • 3/4 teaspoon spice powder (recipe in the post above)
  • 2 teaspoons baking powder
  • 65 ml of milk 
  • 200 grams carrots, grated
  • 100 grams walnuts, chopped 

For the Frosting:

  • 140 grams of cream cheese
  • 90 grams salted butter
  • 470 grams superfine icing sugar

For decorating (optional):

  • 100 grams fondant or sugar paste
  • Orange food coloring 
  • Green food coloring

Method (The Best Carrot Cake Recipe)

For the cake: 

  • In a bowl, combine the flour, spice powder and baking powder. Then, mix well and set aside
  • In another bowl, beat the eggs, sugar, and oil together. Thus, this mixture should turn light & fluffy. Next, add the vanilla essence and beat well. Add in the flour and mix well. Next, add the milk and mix well. As a result, at this stage, the batter shouldn’t have lumps. 
  • To this, add the carrots and walnuts. Thus, mix well and pour in a 6-inch baking dish. 
  • In conclusion, bake in a preheated oven at 170 degrees C for 40 to 50 mins. Or until an inserted skewer comes out clean. Once baked, let it come to room temperature before being frosted 

Frosting:

  • Firstly, make sure the ingredients are at room temperature. Now, beat the butter and cream cheese together. 
  • Next, add the icing sugar a little at a time. Add all of it and beat well making sure the ingredients are well combined. As a result, the mixture should feel creamy and fluffy
  • Then, cut layers of the carrot cake and spread the cream cheese frosting between each layer. Then, cover the cake all around with a lot of cream cheese frosting. However, I like the naked cake look . Therefore, I add less to the sides of the cake
  • Next, color some of the fondant green, and some orange. To garnish, make carrot shapes using fondant just like shown in the video below. In conclusion, place them all around the cake and serve
