Cashew, cranberry and comte fruit salad. All on a bed of baby spinach served with a coriander and honey dressing. Wow!! What a taste sensation. Look at this beauty. Yum! Yum!
What’s more, the super salad is super simple to make. Choose your base, I chose baby spinach. Dry roast some cashews. Blitz the dressing together and away you go!! Easy to make, healthy and very delicious.
Let’s make one…
1. Make the honey and coriander dressing
To make the honey and coriander dressing first gather the ingredients together. Honey, olive oil, fresh coriander, and the juice from l lime.
Put all of the ingredients into a small blender. You can also add a pinch of good sea salt if you like.
Bitz all of these together until you get a smooth and sweet coriander dressing. If the dressing appears too thick just add a little more oil.
2. Dry roast the cashew nuts
It is possible to buy cashew nuts already dry roasted. However, making them fresh is so much better in terms of taste and, if you get the timing right, they can still be warm on the salad.
To dry roast them just add the nuts to a small skillet or frying pan with no oil whatsoever.
Keep the heat at medium and toss them until they start to color. Once the color they are ready.
3. Assemble the cashew, cranberry and comte fruit salad
The first thing to do thinly slice the apple and pear. Do this at the last moment so the fruit doesn’t discolor.
All that’s left now is to put the salad together and this is very easy…
First, lay the salad leaves in a salad bowl. I used baby spinach but you can use whatever salad leaves you fancy.
Now add the thinly sliced apple.
And the pear…
Next, sprinkle over the dry roasted cashew nuts.
And the cranberries…
Finally, add some comte shavings…
And a drizzle of the coriander and honey dressing.
And that, my super healthy food friends, is all there is to it. A really simple recipe today and something you can make and take work for lunch, or just enjoy as a very light dinner. Cashew, cranberry and comte fruit salad. Have as much base leaves as you want and enjoy the sweet coriander dressing. All natural and all oh so yummy.

- 4 cups baby spinach
- 1 oz cashew nuts, bleached ready for roasting Metric, 25 grams
- 1 oz dried cranberries Metric, 25 grams
- 4 oz comte cheese, shavings Metric, 100 grams
- 1 pear, thinly sliced
- 1 apple, thinly sliced
- 1 cup fresh coriander
- 2 tbsp olive oil
- 1 tbsp honey
- 1 lime, for the juice

Gather the ingredients together.

Add them all to a blender.

Blitz to a smooth dressing.

Gather all of the ingredients.

Dry roast the cashew nuts.

Thinly slice the apples and pears.

Lay the salad leaves in the bowl.

Add the pears.

Add the cashew nuts.

Add the dried cranberries.

Shave the comte and add to the salad.

Add a little of the dressing and enjoy this wonderful salad. Yum!
