How to make ranch chicken bites in the skillet:

  • Start by adding a ziplock bag to a large bowl (to help the ziplock back stay upright). Open the ziplock bag so you can easily add the chicken.
  • Cut the chicken breast (or tenders) into bite size pieces. I use kitchen shears for this.

  • Seal the ziplock bag and shake it well to distribute the spices.

  • If you have the time, it’s best to marinate the chicken for at least 20 minutes (up to 8 hours)
  • After marinating, preheat a cast iron skillet or stainless steel pan over medium heat.

  • Once the pan is hot, add the chicken and let it cook for 5 minutes without touching it. After 5 minutes use a spatula and move the chicken around to the other side. Cook again 5 more minutes stirring occasionally.

Substitutions:

  • Chicken: If you don’t have chicken breast you can also use chicken tenders, turkey breast, boneless skinless chicken thighs. Just know that the chicken thighs might take an extra minute or two to cook.
  • Seasonings: You can use 2 tablespoons of your favorite dry ranch seasoning if you don’t have the exact ingredients for this recipe.

Storage:

  • Refrigerator: Once cooked these easy ranch chicken bites are good in the refrigerator for 3 days.
  • Freezer: You can freeze cooked ranch chicken in individual portions for up to 1 month for easy grab and go protein.
    • This ranch chicken recipe can also be made ahead of time and frozen before cooking. Remove as much air from the ziplock bag and label it with a date. Freeze up to 1 month frozen. Defrost in the fridge completely before cooking. I use these reusable silicone bags.

Yes! This recipe can be doubled or tripled but you may want to cook the chicken in batches to make sure the chicken gets nice and browned.

  • Once the chicken is cut, add the garlic olive oil, apple cider vinegar and spices. Seal the ziplock bag and shake it well to distribute the spices.
  • If you have the time, it’s best to marinade the chicken for at least 20 minutes (up to 8 hours)
  • After marinating, preheat a cast iron skillet or stainless steel pan over medium heat.
  • Once the pan is hot, add the chicken and let it cook for 5 minutes without touching it.

Notes

Budget tip: To make this meal more budget friendly, use boneless, skinless chicken thighs. This recipe would be $8.77 recipe/$1.46 per serving using this swap. 
  • If you don’t have chicken breast you can also use chicken tenders, turkey breast, boneless skinless chicken thighs. 
Low FODMAP: To make low fodmap, substitute the 2 tablespoon olive oil + 1 tsp. garlic powder with 2 tbsp. garlic olive oil.
Tip: If you don’t want to make your own ranch seasoning, you can use 2 tablespoons of your favorite dry ranch seasoning

    1. You will still want to add olive oil, you can just use regular olive oil. This helps the chicken from sticking. You will also need the ACV. You can eliminate the other spices since they are in the ranch seasoning. Hope this helps!
