Roasted Brussels Sprouts with Balsamic Glaze

We love supplementing our meals with brussels sprouts and this recipe is quick, simple, and has a sweet elegant glaze.

Ingredients

  

  • 1.5 lbs brussels sprouts similarly sized
  • 1/3 cup cashews
  • 3 cloves garlic minced
  • 1 tsp salt
  • 1/3 cup balsamic vinegar

Instructions

 

  • Preheat oven to 425 degrees. For each brussels sprout, trim off the base and cut in half. Place these in a large bowl and toss with cashews, garlic, and salt. Roast in oven for 25-30 minutes, flipping once.
  • Meanwhile, in a pan on the stove on low-medium heat, heat balsamic vinegar until it is reduced by half and becomes viscous. When brussels sprouts are crispy, place them back in a bowl and pour over balsamic vinegar. Serve warm.
