Happy Friday guys! Today’s recipe is Strawberry Salad with Asparagus & Halloumi – happy Strawberry season! 😃
I am so excited about the strawberry season! And as I loove salads, I couldn’t wait to share with you this amazing salad with lovely strawberries, grilled halloumi, asparagus and sugar snaps. To finish off this beauty I’ve added some toasted pecans. The dressing is simple – balsamic vinegar, olive oil and a bit of salt. What a salad! It’s fresh, crunchy, sweet and salty and so tasty. Everything I fancy in a salad. 😋 Not to mention how simple is to make – all you need to prep is the halloumi, asparagus and sugar snaps, which only takes a few minutes.
It’s perfect to accompany any bbq or even on its own for a healthy lunch. I absolutely love the combination of crispy halloumi and juicy strawberries. It’s simply delicious. And as the bbq season is here too, I’m sure we’ll be having a lot of this salad. For the meat lovers, it’ll work perfect with some shredded chicken.
