What You Need For This Recipe
So, what type of ingredients do you need in this potato and egg recipe? Take a look at the list below:
- Potatoes – use potatoes with a lot of starch like Russet potatoes
- Onion – a small white onion cut into thin rings
- Garlic – mince fresh garlic
- Eggs – use medium to large eggs
- Paprika – to garnish
- Olive oil – to bake the potatoes
- Salt and pepper – season to taste

How To Make Huevos Rotos
- Peel the potatoes and cook them tender for 10 minutes. Drain them and let them cool for 10 minutes before slicing the potatoes into round slices.
- Heat a skillet on medium to high heat and add olive oil. Pan-fry the potatoes on both sides until golden brown and crispy in about 5-7 minutes.
- Do not crowd the pan and give the potato slices space. You may need multiple turns in the pan depending on the size of your pan.
- Take the potatoes out of the pan and set them aside in a bowl. Now sauté the onions and garlic until soft and translucent. Put on a plate and set aside.
- Heat more olive oil and fry your eggs. Leave the yolk whole. Put the eggs on a plate. Then put the potatoes back in the pan with the onion mix and stir.
- Season the potatoes with salt and pepper.
- Put the eggs on top and add a sprinkling of paprika powder. Leave for 3-4 minutes to warm the potatoes and eggs.
- Serve and then cut the eggs so the yolk runs on top of the potatoes. When you want to make this the authentic way you have to cut the potato, like fries.
A Delicious Egg Recipe
Huevos rotos are also known as huevos estrellados which means star eggs as the shape of the eggs is like a star when the yolk is broken.
The first time we ate huevos rotos was in Barcelona Spain. We were in a tapas place and saw it on the menu. We had no idea what it was and when they served the plate with the potatoes and broken eggs, we still didn’t understand the concept.
Other customers who ordered the same cut into the egg and let the yolk run onto the potatoes. We just copied what they were doing and we liked it.
Spain more so than other countries has a tapas culture where you have a bite after work when you go into a bar and have a drink.
These broken eggs fit this concept perfectly. Try it yourself. Make some broken eggs and accompany them with a cold glass of white wine or a beer. Delicious!
How To Store Huevos Rotos
If you have leftovers, you can store them in two ways.
- Refrigerator – in the fridge in an airtight food container for 2 to 3 days. I recommend you bake the egg fresh instead of storing it. Fresh-baked eggs taste so much better.
- Freezer – you can store leftovers in the freezer. You can even freeze baked eggs in the freezer but they taste better if made fresh so just store the potato and onions in the freezer for up to 2 months and add eggs when you are serving the leftovers.

You can eat this broken eggs dish as described in this recipe but you can add some great topping options like:
- Chorizo – paprika-spiced sausage
- Pimientos – green peppers
- Jamon – cured Spanish ham
- Morcilla – blood sausage

Huevos rotos
