Red Beans & Corn Salad Recipe

As we promised a couple of weeks ago, this whole Spring will be dedicated to healthy eating. Making quick & easy meals is so important nowadays. Salads are the best quick meals you can have! Full of fresh & cooked veggies, salads can provide you with all the goodies you’ll need. Our Red Beans Corn Salad is a perfect meal for one person or side dish for 2 people. And can be prepared in less than 20 minutes!

Also being non-stop in a hurry, not having time to cook, eating junk food coz it’s easier – are the most common excuses for eating unhealthy.  
Best Red Beans Salad
We love red kidney beans. They are such a good source of protein. 100 grams of boiled red kidney beans have 8.7 grams of protein and 22.8 grams of carbs. Beans are a very affordable source of plant protein for vegans and they taste amazing. If you don’t like beans use lentils for making this salad.




 

 
When it comes to dressings, we usually use tahini, apple cider vinegar, or lemon dressing. Last two works the best for this salad! If you end up making our Red Beans Corn Salad, let us know what was your favorite dressing! 
Beans and Corn Salad Recipe

INGREDIENTS

  • 1/2 cup (80g) cooked sweet corn
  • 1 2/3 cup (100g) cooked red kidney beans (or canned)
  • 1/2 medium size tomato
  • 1/2 green bell pepper
  • 1/5 cup (5g) curly leaf parsley (chopped)
  • about 1/3 small onion

DRESSING

  • 1 tablespoon of extra virgin olive oil
  • 1 tablespoon Apple cider vinegar
  • a pinch of salt

INSTRUCTIONS

  • For this salad, you’ll need cooked sweet corn and red kidney beans. If you are in a hurry use canned alternatives. We cooked corn ourselves, buy adding frozen sweet corn to boiling water, and cooking for about 5 minutes. For beans we used canned.
  • To make dressing, add all dressing ingredients into a small bowl and mix them until combined. Feel free to add pepper or other spice of your choice here. We kept it simple.
  • Slice tomato and green bell pepper into bite-size pieces. Chopp onions and parsley. Add them to a bowl along with cooked corn and beans. Pour dressing over it. Toss everything together until combined.
