Vegetarian Lobster Rolls

You won’t miss the meat with these vegetarian lobster rolls!  A meatless twist on the east coast classic! This Lobster Roll made with Hearts of Palm tossed with savory fresh herbs, tangy mayo and celery crunch will satisfy your all your guests, vegetarian or not!
 

Memorial Day is around the corner and the weather is finally getting warm in Chicago.  As you all know, holiday menus are everything at the Dinner Fairy house, and Memorial Day is no exception! It’s the first big celebration to welcome summer, and the best time to fire up the grill and have people over for a big patio hang! I try to keep the dishes light as we’re all working on our summer bods, so this meatless option was perfect for the occasion! I’m partnering with Reese Specialty Foods to create a vegetarian twist on this New England classic!

What are hearts of palm?

I’ll be honest, I had never heard of hearts of palm until a couple years ago.  My wife told me a story about her college roommate who used to eat them the plain in their dorm room! After hearing this story, I knew I had to give them a try! Hearts of Palm are actually the edible bud of a palm tree.  These buds are low in cholesterol and calories, but have a good amount of fiber and protein!  You can eat hearts of palm straight out of the can (like Allison’s roommate), or bake, grill, or sauté them!  They’re perfect as a salad topper, or in these vegetarian lobster rolls!  They have a similar texture to artichoke hearts.

How do you make a vegetarian lobster roll with hearts of palm?

This vegetarian lobster roll is one of the easiest things I’ve ever made, I promise!

You start by roughly chopping Reese’s Hearts of palm and placing them in a large bowl for mixing.

Dice 2 celery stalks and add them to the bowl

Add mayo, Old Bay Seasoning, lemon juice, fresh dill, chives and a little salt and pepper to taste, and stir to combine.

Spread softened butter on some lobster roll buns and grill to warm.  Fill with vegetarian lobster roll filling and garnish with more fresh dill and chives and a squeeze of fresh lemon!

Vegetarian Lobster Rolls

Ingredients

28 oz Reese Hearts of Palm, drained and roughly chopped

2 stalks celery, diced

2 tbl fresh chives, chopped

2 1/2 tablespoons fresh dill, chopped

1 tsp old bay seasoning

salt and pepper to taste

1 lemon, juiced and zested

1/4 cup mayo

4 potato rolls or butter brat rolls

2 tbl melted butter


Instructions

  1.  Drain and cut the hearts of palm in small chunks and place in large bowl and set aside
  2. Small dice the celery and add to the same bowl
  3. Add dill, chives, seasoning, lemon juice, zest and mayonnaise.  Stir to combine.
  4. Slice the buns and brush with melted butter.  Quickly place on grill to warm
  5. Fill each bun with hearts of palm mixture.
  6. Garnish with fresh dill and chives and a squeeze of lemon
  7. Serve and enjoy!
