Vegan Lentil & Mixed Greens Salad Recipe

Our Vegan Lentil & Mixed Greens Salad is a great option for dinner or as a side dish. No matter what you choose we promise you’ll love this salad. 🙂

For those of you who are looking for a weight loss recipe or light meals, this is perfect! We love eating it mostly as a dinner, it’s satisfying, has enough protein, and all the good veggies.
Lentil Mixed Greens Salad
For this recipe, we used brown lentils. Feel free to use your favorite ones, just make sure to follow the cooking directions, because each lentil type has to be cooked differently. When it comes to mixed greens we used baby spinach, baby radish leaves, baby lettuce, and some other greens. Add your favorite greens in here, there is no need to stick to the exact measurements and list of ingredients if you don’t have them all.

INGREDIENTS

  • 1 cup (75g) cooked lentils
  • 1 cup mixed greens (any greens you like – kale, spinach, etc..)
  • 1/2 medium size tomato
  • 1/3 cup (50g) cucumber
  • 1 tablespoon chickpeas

DRESSING

  • 1 tablespoon of extra virgin olive oil
  • 1 tablespoon Apple cider vinegar
  • a pinch of oregano (or more depending on your taste)

INSTRUCTIONS

  • How to cook lentils: In a medium-size pot add 3 cups of water and 1 cup of lentils. Bring to boil, then reduce the heat and cook for about 15-20 minutes until tender. Let them cool.
  • To make dressing add all dressing ingredients into a small bowl and mix them until combined. We haven’t used salt in this salad. If you like spices feel free to add your favorite :).
  • Slice cucumber and tomato into bite-size pieces. Add them to a bowl along with cooked lentils, mixed greens, and chickpeas. Pour dressing over it. Toss everything together until combined.
