Chocolate covered strawberries are a classic treat that never goes out of style. Buying store bought chocolate dipped berries can be expensive though, and you can make your own at home for a fraction of the cost! They’re the perfect gift for loved ones on Valentine’s Day. How do you make chocolate covered strawberries?

For this recipe, you’ll want to buy the largest strawberries you can find. If you can’t find big berries, you can use smaller ones, but I find it’s easier to work with the large berries and they tend to look nicer. The berries are dipped in melted chocolate, then can be rolled into toppings if you desire. Let your berries harden, then serve and enjoy!

Tips for chocolate dipped strawberries

  • I find the easiest way to dip strawberries is to grasp them by the green stems, then gently roll in a bowl of melted chocolate until coated. You can also use a fork to help move the strawberry through the chocolate, or even stick a wooden skewer through each strawberry for dipping purposes.
  • Make sure your strawberries are completely dry before you start dipping.
  • Let your strawberries set up on a sheet of parchment paper or waxed paper. You can also use a nonstick silicon baking mat.
  • If you’d like to add a chocolate drizzle on your berries, let them set up, then put a little melted chocolate inside a resealable bag. Snip the tip of the bag, then squeeze the chocolate out of the hole in the bag to drizzle it over your berries.
  • If you’d like to roll your berries in toppings, roll them while they’re still wet. Some great topping options are miniature chocolate chips, finely chopped nuts, coconut or sprinkles.

What is the best chocolate to melt?

You can use chocolate chips, chopped chocolate bars or candy melts for this recipe. I prefer to use candy melts as they melt smoothly and won’t leave any gray residue when they dry like real chocolate can sometimes do. I use Ghirardelli Melting Wafers which come in milk, dark and white chocolate. They’re super easy to work with and they have a great chocolate flavor. You can find these melts in the baking aisle of most grocery stores. If you choose to use chocolate chips, you may want to add a teaspoon of shortening to help thin the chocolate so that it’s easier to get a nice coating on your berries. I don’t recommend using Nestle chocolate chips as they do not melt well.

How do you keep chocolate covered strawberries?

I prefer to store my chocolate covered strawberries in an airtight container at room temperature. You can refrigerate your berries, just be aware that chilling them will cause then to “sweat” or form condensation after you take them out of the fridge. They’ll still taste great, they just won’t be quite as pretty.

How far in advance can you make chocolate covered strawberries?

I recommend making your berries no more than 24 hours before you plan to serve them. Strawberries are highly perishable so the fresher they are, the better these treats will taste! I typically serve my berries within 6-8 hours of preparing them.

Ingredients 

  • 1 1/2 pounds strawberries get the biggest berries you can find!
  • 12 ounces chocolate chips or candy melts can use dark, milk or white chocolate or a combination
  • 2 teaspoons shortening ONLY if you're using chocolate chips
  • assorted toppings such as miniature chocolate chips, sprinkles or nuts optional
  • additional chocolate for drizzling optional

Instructions 

  • Place the chocolate or candy melts in microwave safe bowls. 
  • If you're using chocolate chips, add the shortening to the bowl.
  • Microwave in 30 second increments until chocolate is just melted. Stir until smooth.
  • Dip each berry in chocolate, turning to coat completely. 
  • If you're using toppings, roll your berries in the toppings while they're wet.
  • Set the berries on a sheet of parchment or waxed paper to dry.
  • If you'd like to add a chocolate drizzle to your berries, melt an additional 1/3 cup of chocolate or candy melts and place it in a plastic resealable bag. 
  • Snip the tip of the bag and drizzle the chocolate over the dry berries.
  • Let berries harden completely, then serve, or store in an airtight container at room temperature for up to 24 hours.
