Blackened Cod Fish Tacos

Ingredients

  

Fish

  • 1.5 lb cod
  • 2 tsp Cajun seasoning
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper
  • 1 tsp black pepper
  • ½ tsp sea salt

Other

  • 10 small flour tortillas
  • 1.5 cups cabbage shredded
  • 2 tsp fresh lime juice plus extra
  • 1 bunch cilantro chopped
  • 2 Roma tomatoes sliced
  • 2 avocados sliced
  • 1 small container of Greek yogurt
  • 1 tbsp sriracha

Instructions

 

  • Mix together the spices and coat the fish liberally. Heat a skillet to medium high with coconut or vegetable oil. Cook fish in skillet for 5 minutes or until fish flakes easily with a fork and set aside.
  • In a separate bowl, toss the shredded cabbage with 1 tsp lime juice. In another bowl combine Greek yogurt, sriracha, and a splash of lime juice. Warm tortillas in a warm oven for a few minutes.
  • Construct tacos: start with a tortilla, spoon over some sriracha sauce, then some cabbage. Add fish, then tomatoes, then avocado, topping off with cilantro and another splash of lime juice.
