This vegan chipotle aioli uses my egg free cashew mayonnaise recipe as it’s base.
Cashew mayo is super versatile and I use it for most of my sauces like vegan ranch, avocado lime crema, tzatziki sauce, and even this tartar sauce for my vegan fish and chips!
The key to the perfect creamy texture is to soak the cashews for a few hours before blending them.
How To Make
Vegan Chipotle Aioli
Soak cashews in water for 4+ hours, or until softened. This will give the mayo a creamier texture.
Once cashews have soaked, rinse and drain them thoroughly. Add the drained cashews, lime juice, almond milk, olive oil, adobo sauce, and chipotle pepper to a high speed blender. Add a pinch of salt and pepper to taste.
Substitutions: Try these easy replacements if you don’t have some of the ingredients lying around!
- 2 tsp Smoked Paprika for 1 tsp Adobo Sauce
- 1/2 tsp Chipotle Powder for 1 Chipotle Pepper
Blend on high until the chipotle aioli is smooth and creamy.
The possibilities with this chipotle aioli are endless.
A good sauce has the ability to transform a plain and simple meal into something delicious and full of flavor.
I always keep a couple different sauces on hand and add them to my sandwiches or buddha bowls for an easy, healthy, and delicious lunch!

Ingredients
- 1 cup Cashews, soaked
- 2 tbsp Lime Juice
- 2 tbsp Olive Oil
- 1/4 cup Almond Milk
- 1 small can Chipotle Peppers In Adobo Sauce (We just need 1 pepper and 1 tsp of the sauce from the can)
- Salt and Pepper, to taste (or about 1/8 tsp)
Instructions
- Soak cashews in water for 4+ hours, until softened.
- Once cashews have soaked, rinse and thoroughly drain them.
- Add 1 chipotle pepper and 1 tsp of the adobo sauce from the small can and remaining ingredients to a high speed blender and blend on high until smooth and creamy.
