Zesty Lime-Cooked Shrimp Ceviche

This traditional Mexican-style ceviche uses lime to cook the shrimp, leading to a fresh and delicious summer meal.

Ingredients

  

  • 1 lb raw shrimp
  • 2 Roma tomatoes chopped
  • ½ large red onion diced
  • 10 limes juiced
  • 1 jalapeño pepper minced
  • 1 avocado cubed
  • 1 tsp cumin
  • ½ tsp sea salt
  • 1 tsp black pepper
  • 1 bunch cilantro chopped
  • Tortilla chips or tostadas

Instructions

 

  • Start by peeling and deveining the shrimp, removing tails and cutting each shrimp into about 4-6 pieces. In a bowl, combine the shrimp and lime juice, making sure the shrimp are all submerged. Let rest for at least 1.5 hours.
  • Meanwhile in another bowl, combine the tomatoes, onion, jalapeño pepper, cilantro, cumin, and salt/pepper. After the shrimp has turned completely from gray to pink, pour the shrimp/lime into the other bowl, add avocado, and gently mix to combine.
  • Serve chilled or room temperature with chips or tostadas.
