I’m really feeling the tropical healthy smoothies these days. Especially this Pineapple Banana Coconut Oil Smoothie.

It’s a refreshing, piña colada inspired, nutrient-packed smoothie that is easy to make at home and that is a real crowd pleaser.

I have been wanting to make this Pineapple and Banana Coconut Oil Smoothie for a while now.

There is a smoothie shop around the corner from my house that makes a similar smoothie and my daughter just loves it.

I love that she’s getting healthy vitamins, minerals and fats from this smoothie, especially now that she is becoming a bit more picky with what she eats ( hello toddler phase ).

But I didn’t want to keep paying $7 per smoothie ( gasp ). So, I decided to recreate it myself at home.

What do you need to make this Pineapple and Banana Coconut Oil smoothie?

  • frozen banana
  • frozen pineapple
  • coconut water
  • coconut oil

Basically, all you need are these 4 ingredients to make this healthy piña-colda inspired smoothie. 🙂

The banana adds sweetness and substance. The pineapple also adds sweetness but it’s main purpose is that it adds a great tropical flavor.

The coconut water adds a hydrating quality to the smoothie.

And the coconut oil adds a nice metabolic boost while also adding healthy fats to the smoothie… which makes you end up feeling satisfied. 🙂

How to keep the coconut oil from clumping:

For those of you that have experience cooking and baking with coconut oil, you’ll know that it is very easily affected by temperature.

It starts off in a semi-hard state, but it melts very easily.

It also hardens very easily when exposed to the cold.

I was curious myself as to how to use coconut oil in a smoothie without it being super clumpy, but the key is to make sure to melt it until warm.

Don’t melt it until it is hot! Basically, once the coconut oil is melted, stop heating it!

Then, pour the liquid coconut oil into the smoothie WHILE the smoothie is mixing in the blender.

The movement inside the mixing blender will ensure the coconut oil gets mixed into the other ingredients evenly and also reduces the likelihood of clumping.

( Though, if you don’t care about clumping, which I don’t because it really doesn’t affect the smoothie, just put the coconut oil into the smoothie in it’s original state at the same time as the other ingredients)

Pineapple and Banana Coconut Oil Smoothie (Paleo)

A delicious and healthy tropical smoothie made with pineapple, banana, coconut water and coconut oil.

Ingredients 

  • 1 heaping cup frozen Pineapple
  • 1 frozen Banana
  • ½ cup coconut water
  • 1 Tbs coconut Oil

Instructions 

  • Melt the coconut oil. Make sure it is warm and not hot.
  • Put all of your ingredients except the coconut oil into a blender and mix. While the blender is mixing, add in your coconut oil and keep mixing until smooth.
  • Recipe yields 2 cups of smoothie.

Notes

Note: you can add the coconut oil in it’s hardened state if you don’t care about clumps. But if you want to avoid coconut oil clumps in your smoothie, melt it until warm and then put it into the blender while mixing the other ingredients.
