Chicken Mushroom and Asparagus Spaghetti

It was a high time to show you the absolute best recipe we both love. Our Chicken Mushroom and Asparagus Spaghetti Recipe is fast, satisfying, and most of all delicious!

As we all know spaghetti is the most popular pasta. It pairs so well with any sauce, but one of the most common sauces is definitely a tomato sauce, that we used in this recipe. It gives just enough sourness to the meal to make it taste fabulous.  
Mushroom Asparagus Spaghetti
When we came up with this recipe, we wanted to make something different, something that will have veggies and meat, but also not to be too heavy for our stomach. This is the perfect combo, it has crunchiness from asparagus, meat, delicious mushrooms, and delicious Parmesan cheese on top. It reminds us of Italy and all the delicious meals we tried there.

This recipe contains gluten, although you can make it using any gluten-free pasta.
Chicken Mushroom Spaghetti
Prep time: 10 min   Cook time: 20 min   Total: 30 min   Servings: 2




 

 

INGREDIENTS

  • 7.1 oz (200 g) uncooked spaghetti
  • 7.1 oz (200 g) fresh mushrooms
  • 10.6 oz (300 g) chicken breast 
  • 1 small chopped onion
  • 2.8 oz (80 g) fresh asparagus
  • about 1/3 cup (80 ml) tomato sauce
  • 1/4 teaspoon salt (optional – depends on your taste)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 teaspoon olive oil
  • Parmesan cheese (amount depends on your taste)

INSTRUCTIONS

  • First, prepare your veggies and meat. Chopped the onions, slice the mushrooms, and cut the asparagus and chicken breast into bite-size pieces.
  • How to cook spaghetti: Add fresh water in a large pot and bring it to boil. Add pasta. We don’t use salt or oil here. If you want you can add, but our pasta never sticks together, therefore there is no need for extra salt or olive oil. Stir the pasta. Test occasionally. Cook for about 7-10 minutes to be done. When done drain.
  • In the meantime in a large saucepan add 1 tablespoon of olive oil and chopped onion. Cook over medium heat until it becomes translucent. Then add sliced mushrooms, salt, oregano, and thyme. Stir well and let it cook for about 3 minutes (cover the pan with a lid). Then add chicken breast and asparagus and cook for 5-7 minutes (with pan covered). Add water only if necessary 
  • Add cooked pasta into a frying pan and pour over tomato sauce. Stir everything together and let it cook for 1 to 2 minutes. 
  • Transfer Chicken Mushroom and Asparagus Spaghetti into a too serving dishes of your choice, and garnish with some Parmesan cheese.
