For this pinwheel recipe, you only need a couple of ingredients. For this basic recipe, you need the following ingredients on your grocery shopping list:

  • Tortillas – I use flour tortillas for this recipe
  • Sauce – you need some roasted tomato salsa
  • Avocado – make some guacamole with an avocado or buy guacamole at the store
  • Red onion – finely diced
  • Bell pepper – finely dice a sweet red bell pepper
  • Jalapeño – finely diced
  • Diced sun-dried tomatoes

How To Make Mexican Pinwheels

  1. Start this recipe by making a big bowl of guacamole. Then take a big burrito-size tortilla and take a cup of guacamole.
  2. Spread the guacamole as the first layer on top of the tortilla. As a second layer add your favorite tomato salsa to the tortilla.
  3. I made my favorite roasted tomato salsa which is perfect for this recipe. Then sprinkle finely chopped bell peppers, red onion, jalapeños, and sun-dried tomatoes on the tortilla.
  4. Now it is time to roll up the tortilla tightly and refrigerate it for at least an hour or overnight. Cut them into slices as big as sushi.

How To Store Mexican Pinwheels

When you make a big batch of pinwheels or have leftovers you have several ways to store Mexican pinwheels:

  • Refrigerator – you can store these in the fridge for 1 to 2 days. As avocados discolor easily, they can turn brown. Preferably you store it when it is not cut into pinwheels. That way the majority of the guacamole remains green. When wrapped store it in an airtight food container
  • Freezer – guacamole, and avocados freeze very well so you can store these pinwheels in the freezer. Store them in a freezer-friendly food container for up to a month. Let them thaw in the fridge overnight before storing. Again, the guacamole can discolor

Ingredients

  • 2 burrito size tortillas
  • 1 cup tomato salsa
  • 1 cup guacamole
  • ½ diced red onion
  • ½ diced bell pepper
  • Jalapeño
  • 5 sun dried tomatoes diced

Instructions

  1. Make a big bowl of guacamole
  2. Then take a big burrito size tortilla and take a cup of guacamole
