This Bruschetta Chicken recipe does not have any additional cheese or balsamic reduction added to it. I love how simple and flavorful this chicken recipe is. Pan-seared chicken on a nonstick skillet, topped with a tasty tomato bruschetta topping. The Pesto makes this bruschetta chicken recipe just extra good and so flavorful. You can use a store-bought pesto sauce or you can easily make homemade pesto sauce.

ingredients you’ll need

  • Chicken Breasts: Boneless and skinless chicken breasts. You can also use boneless and skinless chicken thighs.
  • Pesto: Homemade or store-bought.
  • Bruschetta Topping: Cherry tomatoes, fresh garlic cloves, pine nuts, fresh basil. salt and pepper.

How to make bruschetta chicken

  • Coat the chicken – Rub chicken fillets with pesto sauce on all sides.
  • Cook the chicken – In a large pan or grill, cook chicken for 8-10 minutes, or until cooked through and no longer pink in the inside.
  • Make the bruschetta topping – in a bowl, combine all bruschetta topping ingredients which are: chopped tomatoes, minced garlic, olive oil, salt and pepper, fresh basil, and pine nuts.
  • Combine – Top each chicken fillet with the bruschetta mixture and serve immediately. Enjoy!

Storing and Reheating

  • Storing: Store the chicken and bruschetta separately. You can transfer leftovers to airtight containers, and then store them in the fridge for up to 4 days. You can freeze for up to 3 months.
  • Reheating: To reheat the leftover chicken, use either the microwave or the oven. If using the oven, set it to 400F, put the chicken in a baking dish covered with foil, then bake for about 10 minutes or until heated through. Do not reheat the topping.

Ingredients

  • 2 Chicken Breast boneless, skinless, sliced lengthways to make 4 fillets
  • 4 Tbsp Homemade Pesto Sauce or store-bought

BRUSCHETTA TOPPING:

  • 1 Cup Cherry Tomatoes chopped
  • 1 Garlic Cloves minced
  • 3 Tbsp Toasted Pine Nuts
  • Shredded fresh basil
  • 1 Tbsp Olive Oil
  • Sea salt and fresh ground black pepper, to taste

Instructions
