- Drain the water and immediately put the eggs in cold water to easily remove the eggshell. Dice the eggs into small pieces.
- Put the chopped eggs in a large mixing bowl. Now chop the red onion finely as well as the chives. Add the mayonnaise and mustard to the mixing bowl and the ranch seasoning.
- Take a spoon and stir the ingredients together into a soft creamy egg salad. You will get a crunchy rustic salad.
- Add salt and pepper to taste.
- Your salad is ready to serve.
Easy Egg Salad Recipe
An egg salad should be creamy at least in my mind. Not just floating in mayonnaise but a good combination of ingredients. You get a super creamy consistency when the boiled egg york is combined with the mayonnaise.
You will not taste anything better than this I promise. As with the shrimp salad I shared a couple of weeks ago this recipe is one I learned from my mom and adapted it to my favorite recipe.
No need to buy a mayo-rich salad with ingredients you have not heard of before. This recipe is homemade and 100% delicious.
To get the best result choose free ranch eggs from chicken that were free to roam around and enjoy the outdoors. You can also taste it in your recipes. Whenever possible choose organic if available you really can taste the difference.
How To Store Egg Salad?
The best way to store egg salad is in a cool place. You can keep it in the fridge for at least two days. Longer is possible depending on the freshness of the eggs.
It is not recommended to store egg salad in the freezer as it contains mayonnaise which will split when thawed.
Serve Egg Salad With
You can eat this egg salad by itself but you can also eat it with:
- Homemade flatbread crackers

- Soft pide bread bun
- Soft flour tortillas
- Homemade bagels
