This Pan Seared Lemon Pepper Salmon with Arugula Salad is an absolute stunner. Loaded with flavors, easy to make and done in 20 minutes. The perfect dish for a busy weeknight or weekend lunch. The secret to this recipe is to use fresh salmon and a good quality lemon pepper seasoning. I used Spain on a Fork´s lemon pepper seasoning, this is not your average lemon pepper from the supermarket. This is some gourmet lemon pepper that takes this dish to the next level in greatness.

– How to Perfectly Sear Salmon –

Pan searing salmon is actually extremely simple, you have to heat a pan with a medium-high heat and add 2 tbsp of fat, I only use extra virgin olive oil. Two minutes after heating the fat add the salmon to the pan and using a spatula push down on the salmon for about 30 seconds. This technique is what helps give the salmon that beautiful sear. For a 1-inch thick piece of salmon cook for 3 minutes per side for a perfect cook. Pan Seared Lemon Pepper Salmon with Arugula Salad

Ingredients

FOR THE SALMON

  • 2 fillets fresh salmon
  • pinch sea salt
  • pinch lemon pepper seasoning

FOR THE ARUGULA SALADA

  • 2 cups fresh arugula
  • 1/2 red onion
  • 8 cherry tomatoes
  • pinch sea salt
  • pinch black pepper
  • 1 tbsp extra virgin olive oil

EXTRAS

  • 2 tbsp extra virgin olive oil
  • slices of lemon

Instructions

  1. Grab 2 plates and add a handful of fresh arugula to each one, thinly slice 1/2 of a red onion and evenly divide on top of the arugula, cut 8 cherry tomatoes in half and evenly divide on top of the salad, season the salad with sea salt & freshly cracked black pepper and set aside

  2. Season 2 fresh fillets of salmon (mine where 1-inch thick) with sea salt and a generous portion of lemon pepper seasoning, compact the seasonings with your hands so they stick to the salmon

  3. Heat a fry pan with a medium-high heat and add 2 tablespoons of extra virgin olive oil, after 2 minutes add the fillets of salmon seasoned side down, using a spatula push down on each fillet for about 30 seconds, this will help give the salmon that beautiful sear, after 3 minutes flip the salmon fillets to cook the other side, after a total cooking time of 6 minutes remove the salmon from the heat and add 1 fillet to each plate with the salad, garnish with a couple slices of lemon and add a kiss of extra virgin olive oil to the salad, enjoy!
