Chopped white onion

Vegetable broth

Coconut aminos (or soy sauce)

Crushed tomatoes

Tomato paste

Balsamic vinegar

Salt and spices, bay leaf (optional)

How to make low carb soup in the slow cooker

Add all the ingredients to the slow cooker.

Stir the ingredients in the slow cooker to make sure everything is combined and cook on low for 8-10 hours (or high for 4-6).

If you want to add protein to cook in the crockpot

  • Quickly brown ground turkey or ground beef in a skillet before adding it to the bottom of the crockpot. Add the rest of the ingredients and cook per directions
  • Add chicken breast or turkey breast whole to the crockpot. After cooking, remove the chicken breast or turkey breast and shred with 2 forks. Add the shredded meat back to the soup

    Oh my goodness!! This was sooo good…I added cooked hamburger meat and kilbasa sausage to it. Great base for any soup. A definite keeper for sure.

    Oh my, my, my!! THIS soup is DELICIOUS! I was a little worried in how the taste would come together but this is now a favorite soup of mine!!! I could not find a Mediterranean Blend of veggies; therefore, I bought the regular old mixed vegetables you would use to make just this….vegetable soup. I then bought frozen peppers and onions (come in a bag together); therefore, I didn’t even have to take the time to cut up an onion! I cooked hamburger that I added so there would be some protein. YUM! YUM! YUM! I will be making this over and over, again and again!!
