Made with an olive oil, lemon juice, cumin and fresh cilantro dressing, this summer salad is sure to win your heart.

Ingredients for Summer Fiesta Mango Avocado Red Onion Salad:
  • Mangoes
  • Avocado
  • Red Onion (All very obvious up til now)
  • Cherry or plum tomatoes

And the aforementioned delicious olive oil, cumin dressing to bring everything together in a wonderful way that your tastebuds will love you for!

  • Whisk together dressing ingredients
  • Slice, cube, halve all other ingredients
  • Toss together in a bowl
  • Pile into a salad bowl or onto a platter and serve

I’m going to go out on a limb here and say it’s THE BEST summer salad, at least it’s my favourite to date.

I know it seems like a strange combination, but wait til you try it, just waaaaait.  YUM.

I could eat the mango, red onion and cumin dressing all on their own, but I’m not sure that could be classed as a salad.  Hmmm, dono. Add in the other ingredients though, and BOOM:  Summer Fiesta Salad Central.

Mangoes are our go-to dessert in summer.  We are in the heart of summer right now here in SA (South Africa), and I’ve been buying mangoes by the box full twice a week and it’s been a while since we missed an evening of fresh messy-mango dessert, eating it right out of the skin is my fave.  Too scrumptious for words.

And now we have a mango salad to enjoy with our meals, winning!

  • Fresh strawberries – I think this would be phenomenal
  • Pasta?? Turn this into a pasta salad – YUM
  • Chicken – Oh, yeah
  • Baby spinach – Never a bad time to add baby spinach

Annnd if you wanted to make this more of a Thai Mango Salad vibe you could add:
  • Chopped cashews or peanuts
  • Chopped mint
  • Add 1 tbsp sesame oil to the dressing
  • And add a few tbsp of fish oil to the dressing

Ingredients
  • FOR THE SALALD:
  • 2 large mangoes , peeled and sliced
  • 1/2 red onion , sliced thinly
  • 10 - 12 cherry tomatoes , sliced in half
  • 1 -2 avocados , peeled and sliced or cubed
  • FOR THE DRESSING:
  • 6 tbsp olive oil
  • 2 1/2 tbsp lemon juice , or apple cider vinegar
  • 1/2 tsp cumin (more if you like)
  • 10 - 12 fresh coriander (cilantro) leaves , finely chopped (optional)
  • Salt to taste
Instructions
  1. TO MAKE THE DRESSING:

  2. In a small jar, mix together the olive oil, lemon juice, cumin and fresh coriander. Allow to sit while you make the salad.

  3. TO MAKE THE SALAD:

  4. Gently toss all ingredients together with as much of the dressing as you like in a medium sized bowl. 

  5. Arrange the salad in a pretty bowl or on a salad platter and serve.

Recipe Notes

This salad is delicious with honey mustard chicken, lemon and herb chicken or fish fillets.  Best enjoyed in the summertime when mangoes are in season!
