15-Minute Orzo with Prawns, Tomatoes & Feta

Today I’ve got one of my all time favourite, Greek-inspired quick and easy dinners for you that I know is going to help you get out of your weeknight supper rut. I came up with this recipe when I was still living in Borough and working in Parliament, and it really was something quick and easy to come home to after a day that had run a little later than planned, waiting for a vote that was running late or making sure every last piece of correspondence was ready and printed for the boss to sign whenever he got back from the Commons chamber.

I love orzo because it is a delicious, toothsome pasta that cooks really fast so it is great with something saucy if you’re in a pinch; it is also great for baked pasta dishes because of it’s smaller shape like my One Pan Greek Meatballs with Orzo & Feta. Once you’ve got that cooking away, all you have to do is toss together the rest of the ingredients, stick them under a grill whacked on high until the prawns cook through, and then just crumble some feta over the top to serve. A quick, healthy, sunny supper so you can pretend it is not freezing outside!
